WIAW–Breakfasts Lately

Happy Wednesday!

For today’s WIAW post, I thought I’d share some of the breakfasts that I’ve been making over the past couple of weeks to bring in to work with me. I get up early to head to the gym, come home and shower, get ready and by then I really just don’t have time to sit down and eat. I’ve found that bringing my breakfast to work makes things a lot easier and a few other people on my floor do the same!

Peas and Crayons

The first two are things that I actually eat at home. When I do strength training (or if I’m just extra hungry, like yesterday) then I’ll make something quick with protein and carbs to eat right when I get home from the gym.

I was out of protein powder for a while (great for smoothies) so I came up with this quick concotion. I slice up a banana, put the slices down on my small pan, and then pour in some egg whites (about 1/3 cup maybe?). Then I’ll flip it like a pancake once it’s cooked a bit and voila!

So good! I also make green smoothies when I have the chance. I’ll blend a handful of  spinach, about a half cup almond milk, a scoop of Sunwarrior Protein powder and half a banana.

I’ve really been mixing things up for breakfast. For several weeks I brought overnight oats and, while delicious, I wanted to go out of the box.

First up, I tried Robyn’s Pumpkin Breakfast Bake, topped with almond and coconut butter. This was AMAZING. And it smelled so good! I’d bake it the night before, re-heat it in the microwave and then add the butters on top. By far one of my favorites!

The next thing I made was… Whole Foods! Haha. Just threw this one in there – last Friday morning I really needed to run to Whole Foods before leaving for the weekend so I cut my morning time short and went before work. Since I didn’t have time to put together breakfast, I grabbed some eggs, bacon, potatoes and fruit from their breakfast bar!

My most recent breakfast of choice (Because it’s so quick for me to make) has been oatmeal! I’ll make it that morning while I’m rushing around getting ready and then reheat at the office and top with almond and coconut butter.

In the oats: 1/3 cup oatmeal, 1/2 T ground flax, almond milk and water, vanilla, stevia, cinnamon, and either 1 whole egg or 3 egg whites.

And finally, this is the breakfast I’ll throw together if I’m in a real rush. I microwave the sweet potatoe (for about 4.5-5 minutes, wrapped in a wet paper towel) and then top with two scrambled eggs cooked in coconut oil, and some ketchup and pepper.

  1. Do you eat before the gym?
    I’ve been on a protein pancake kick. I make a huge batch on Sunday, and reheat them pre and post workout. Pre I top them with a bit of syrup, and post I’ll mix cookies and cream protein with almond milk to pour over top!

    • I don’t eat before the gym – I’m out of bed by 5am and walking to the gym at 5:15 so at that point I’m still half asleep! When I didn’t have to be at work at 8:30am I used to eat breakfast first, wait a couple hours and then go. If I wake up hungry though (very rare for me that early) then I will eat half a banana before heading out the door.

  2. On mornings where I work out before work, I always eat my breakfast at my desk. My favorite easy to pack breakfast is yogurt/fruit/granola. I also love smoothies as a quick eat-on-the-go option, but hate cleaning out the blender.

    • Yes – I hate cleaning the blender! I always just fill it up with water and let it soak and then I’ll get home and thing – UGH now I have to clean it! haha

        • That breakfast sweet potato looks amazing! I’m adding that to our breakfast list. Since my husband leaves for work super-early, I try to make an egg bake of sorts with veggies, eggs, and bacon or sausage on Sunday afternoon. They’re quite tasty and super-easy for him to grab-and-go then eat at his desk. And it’s big enough that I can enjoy it, too 🙂

          • the sweet potato and eggs are so quick and easy to make! Probably took me around 8 minutes from start to finish!

    • I’m not usually, but it started because I’d have to manage with whatever I had on hand! And I really wanted to make that pumpkin bake!

  3. You have so much variety with your breakfasts!! I eat overnight oats basically everyday. I have to pack both my breakfast and lunch everyday so they’re usually the same! I take my oats with me in the morning – it saves like 15 minutes to sleep more 🙂 I’ve been dying to try Robyn’s oatmeal bake! It looks so yummy!!

  4. Your breakfasts are so creative! I eat eggs every single day. Fried with bacon if I have time, scrambled and cooked in the microwave if I don’t. I also have some fruit or veggie with them, and bring it all to work if I don’t have time to throw it down before I have to leave.

      • I mentioned it at the beginning, but yes, I was in a big overnight oats phase for a month or so! Although I like to eat mine cold. So good!

    • lol throw it down? I love breakfast too much to eat it quickly, I love to take my time! Probably my favorite meal of the day…

    • A banana egg white omelet…I love it. I’ll be trying that tomorrow!
      I rotate 2 different breakfasts of either egg white oats or egg/egg white veggie scramble, but I always change up the add-ins to both.

    • Haha yep – where their regular hot bar is, they’ll have breakfast foods until about 10am. It’s different at each whole foods though. Some just have a few items while others have huge spreads!
