Hey all! I hope you’re all having a good week – halfway through! Although, personally, I wish time would just slow down a bit! It’s finally fall here in Chicago and I pulled out my jacket for the first time since May!
For today’s WIAW, I’m showing you what I had yesterday, a day including a visit with my career counselor and some job hunting. If you’re new to What I Ate Wednesday, head on over to Peas and Crayons to find out what it’s all about!
I woke up bright and early, posted to my blog, had some coffee and got ready for the gym. My stomach started growling before I headed out, so I also had about 1/3 a banana before leaving.
I had 3 miles and an 18 minute strength workout from PurleyFit on the agenda. After working out, I headed home, showered, got dressed and then made breakfast: Chocolate Protein Oat Bran! It included the rest of that banana and Sunbutter. I like sunbutter, but not as much as almond butter. They have been out of AB at my Trader Joe’s for weeks and weeks… so this is what I bought. Oh well.
After breakfast I prepared for my meeting with my career counselor, which included double checking my resume and writing down a bunch of questions I had so I wouldn’t forget. Then I hopped on the bus and headed downtown! I was a little early so I hung out in school for about a half hour (kind of awkward…) and then had my meeting. Afterwards I walked about 2 miles to a Starbucks in the Gold Coast, stopping at a GNC to buy some Quest Bars on the way. I hadn’t had one in ages so for Lunch #1 I had a White Chocolate Raspberry Quest Bar, half a green Naked juice, and a skim cappuccino.
After a few hours at Starbucks I’d gotten frustrated with their poor internet and decided to head out. I stopped at Whole Foods on my way home and grabbed a salad which I ate when I arrived home for Lunch #2:
The salad included greens, carrots, beets, artichokes, sweet potatoes, chicken, parmesan cheese, and balsamic vinegar and olive oil.
For dinner I made a beef patty that I’d bought at Trader Joes (my apartment now smells like hamburgers…), with sautéed collards, asparagus and butternut squash. Served with ketchup; so classy.
For dessert I had a Blueberry Noosa yogurt, with some more sunbutter and about a TON of Ghirardelli Sea Salt and Almond Dark Chocolate. This stuff is like crack.
I also had several Chimes Ginger Chews throughout the day, and a couple samples while at Whole Foods. Always bites here and there that don’t show up in a WIAW post, which I’m sure is true of most participating bloggers!
What’s your favorite kind of nut butter? (or seed…)
Do you like to walk places instead of driving or taking public transportation?
Good luck on the job search girl! The hardest part is definitely writing out all those cover letters!
Favorite nut butter is simply peanut butter! I don’t get too crazy ha ha!
Ugh I HATE the cover letters!
I think my favorite nut butter all depends on what I’d be putting it on! With carrots or bread, peanut butter all of the way. On oatmeal I’d go with almond butter. Pecan butter and sunbutter are also fantastic choices.
Your supper mash up of vegetables looks really good. I’ve been getting into squash lately too.
I don’t think I’ve ever had pecan butter!
Oh do it! 😀 Just roast up some pecans and make your own with a touch of salt. So sweet tasting, heavenly.
Fingers crossed for the job hunt! I hate writing cover letters. It always feels like bragging 😛
Thanks, Juli!
I hope the job hunt goes well! I’m usually a peanut butter sort of person, but I think that Justin’s Chocolate Hazelnut has to win out for me. That stuff is addictive!
Oooo Justin’s Chocolate Hazelnut is so good!
Best of luck on your job searching. That’s been my life for the past few months. I’m starting to go crazy haha.
My TJ’s is ALWAYS out of almond butter. It’s getting a little ridiculous at this point. I go there early in the AM, too!
Seriously, mine is too! It’s been months! I saw it once a couple weeks ago and should have snagged some!
girrrrrl i love your eats and it sounds like a day i would have LOVED to join in on! i love you so much katie and i hope you know HOW EFFING PROUD I AM OF YOU
Awww THANK YOU Meg! You are such a sweetheart, love you!!!
Good luck on the job searching! Be patient & be yourself. Also, don’t settle! That is something I learned real quick 🙂
Mmmmm chocolate in the evening is the BEST!
Aww good advice, Annette!!
I tried sunbutter once, and I really wasn’t a fan. It tasted burnt to me for some reason! That Whole Foods salad looks amazing, and I’m really impressed at the amount of greenery in there. I usually fill mine with a bit of romaine, a few other veggies, loaded mashed potatoes, pastas, and cheese. And ranch. Everything just looks too good to pass up!
I don’t know if you’ve talked about this before, but what kind of law would you like to practice? Sending good thoughts for the job hunt!
Sunbutter tasted weird the first time I had it but it grew on me… Still not my favorite though. And I wanted to add all that stuff but I was trying to save $$! It was hard.
And I would love to practice environmental law, I have a certificate in it! But I’m having a really hard time finding any jobs!
I love all things peanut butter! Can never have enough 🙂 And good luck with the job search, I know how stressful it can be!
Thanks, Becky!
The TJs I went to last weekend was out of AB!! I was really mad because my jar is almost empty. I wonder if there is an almond shortage. I will be on the career hunting train here in about… 5 months so here’s hoping that both of us find great jobs!
I seriously think there is some kind of shortage! Haha
My favorite is almond butter but the Trader Joe’s AND the Whole Foods near me was out – what’s happening?! I’m all out and I am sad.
Omg it seems like this is happening to everyone!
Good luck with the search! One of the things I miss most about Chicago (I moved away a year ago) is the ability to walk places. Dallas just isn’t like that!
That’s what I love too! I grew up in Kansas City and, like Dallas, it’s just not a walking city!
Good luck with your job search, Katie!!!
Thanks, Kaitlyn!
Our TJs in Indy had been out of almond butter for so long too! Finally a few weeks ago they had it restocked so I grabbed a few. Hopefully they restock yours soon! It is the best almond butter in my opinion 😉
I hope it’s here soon! I agree – I LOVE TJ’s almond butter!
oooh man that chocolate with some sunbutter sounds outrageously good
the BEST combo!
Your “ton of chocolate” is like my “just a piece…” 😉
oh that was just one of many pieces… haha just can’t have one!
My favorite is sunflower butter but almond butter is a close second. Good luck on the job search, I’m right there with ya! Both Stressful and exciting at the same time. Fingers crossed for both of us!
Thanks, good luck to you too!
My favorite nut butter of all time is Peanut Butter & Co.’s Cinnamon Raisin Swirl. It makes my oatmeal taste like and oatmeal raisin cookie!
