What I Ate Wednesday–Whole Foods Style

Happy Wednesday! I hope you’re all having a great week, and thank you for all your kind and thoughtful comments on yesterday’s post. I hope it was an exercise that you all can use in your own lives.

Today’s What I Ate Wednesday post comes from Monday, where I had a good workout, a chiropractor appointment, and then several hours of job searching followed by some blog work. And, as you can tell by the title of this post, a trip to Whole Foods! If you’re new to WIAW, head on over to Peas and Crayons to see what it’s all about and find other participating bloggers!

After heading to the gym for my 3 miles and Purely Fit Workout, I came home, showered and made some blueberry oat bran. I pretty much just followed my Blueberry Muffin Oatmeal recipe, but used oat bran instead of oatmeal, and used psyllium husk instead of chia seeds. I topped it with a mixture of PB2 and coconut oil.

After breakfast, I headed out to a chiropractor appointment that I had to walk a ways to, and then I went into a Starbucks nearby afterwards for a few hours to get some work done. I got a Tall Bonde Roast with 1 pump of pumpkin spice. After being there a while I had a Jimmy Bar for a snack.

A while later I walked to Whole Foods since it was only a little over a half mile away and grabbed lunch. I had a salad as well as a few things from the hot bar, like mashed potatoes and chicken fried rice. LOVE WF hot bar…

With my lunch, and while I was working (I stayed for another two hours to do some more work) I had a fun size of M&Ms that I grabbed from my chiropractor’s office.

For dinner, I had some Veggie Noodle Gluten Free soup.

. It wasn’t too filling though, so I also had the trail mix I made at Whole Foods. This picture does no justice to how much there was in there… So good.

Later on in the evening I made a big bowl of air popped popcorn topped with cinnamon.

Along with some candies from Whole Foods. Gosh I love that place.

Definitely more eating out than I’d like (trying to save money!) but it was a Whole Foods filled day, which is always a good day in my book!

    • Haha it’s about a half hour for me to get there too if I use transit (or a 3 mile walk). Yet somehow I find myself there about once a week…

  1. Whole Foods is my go-to study food. We have one about 1/2 mile from campus, and it’s the BEST study spot. Whenever I get a WF salad, I add some loaded mashed potatoes from the hot bar. Mmmmmm.

    I’m not the biggest fan of popcorn (I really only like cheesy popcorn), but I’ve been really into nuts as a nighttime snack. (<< Sounds dirty, but I promise I'm talking about cashews.)

  2. Is that soup homemade? It looks yummy. Can I have the recipe or the brand name, please? What are your other salad add ins? I need some ideas, please. My favorite night snack is gluten free toast with peanut butter….or lactose free yogurt with chia seeds in it.

    I’ve only ever been to Whole Foods once (I won a gift card in a raffle) but I looooved all of their food bars. We ended up using the GC for lunch there that day and only a couple of other items and then it was spent already! LOL

  4. Everything looks delicious…I can’t believe I still have never been to a Whole Foods. I guess I need to suck it up and make the 1.5 hour drive to see what all the hype is about! Does that make me a bad blogger? 😉

  5. I am currently obsessed with popcorn too!! It’s so cheap (and organic) from the WF bulk bin and so easy to make. I just throw the kernels into a brown paper bag and microwave for 1.5 min. Sooo addicting

  6. Your eats look yummy! Always love thinking about new ideas from these posts. I don’t get to WF much but have a similar type organic market near me. They have the best soups, kale salads and quinoa dishes. Oh and they make gf chocolate chip cookies and muffins. They are good!
    Having issues with good nighttime snacks. Always eat too much as one snack leads to another! Love popcorn, oatmeal or gf Barbara’s cereal with almond milk.

    • Oh that sounds good! I love local markets that are like Whole Foods. I have the same problem sometimes with snacks. It helps if I tell myself once I’ve finished one to wait at least 20 min before grabbing another. Usually by that time I don’t want anything else. Usually… haha

    I’m new to your blog and I’m loving flipping through your posts! That cinnamon popcorn looks delicious – I was wondering how you make it. I usually spray air popped popcorn with olive oil and sprinkle on toppings after that..is this what you do or do you have another preferred method?
