WIAW–Meal Prep Style

For today’s WIAW I’m going to show you the pieces I’m using to make several of my meals for this week. If you’re new to What I Ate Wednesday, head on over to Peas and Crayons to see what it’s all about!

One of the biggest issues I have when it comes to eating well-rounded meals, or basically not snacking all through a meal, is that sometimes I’m just not in the mood to cook. Or, I’m hungry right then and don’t want to take the time to make something.

I was inspired this week by Lindsay’s Sunday Meal Prep post and decided to go ahead and try it for myself!

Here’s a step by step of what I put together:

1. Veggies: I cut up a bunch of zucchini and summer squash and sauteed them in olive oil. I also grabbed a bag of broccoli and went ahead and steamed it to add as an easy side to meals.

2. Cauliflower Mash: I’ve been wanting to try making “mashed potatoes” out of cauliflower for a while. I cut up a head of cauliflower, steamed it, and then blended it in the Vitamix with some salt, pepper and a little garlic powder. It’s not bad, but makes me want to add a bit of butter to the dish!

3. Sweet Potatoes: I always microwave my sweet potatoes which 1) doesn’t taste as good and 2) is unhealthy since I wrap them in plastic wrap to do so… Guessing that’s not great toxin-wise. Anyway, I threw 4 sweet potatoes in the oven at 400 degrees for about 45 minutes. Voila!

4. Vegetable Shrimp Curry Crock Pot Meal: Saw this recipe on Treble In The Kitchen and it was really easy to make: just threw all the ingredients in the crock pot and then added the shrimp an hour before it was done.

5. Quinoa: quinoa is super easy to make ahead of time and store. I just threw 3/4 cup quinoa dry into a pot with 2 cups of water and boiled until the water was about gone.

6. Baked Chicken: (not pictured) I baked two large chicken breasts and broke them up into pieces and stored in baggies. Not gonna lie, I hate cooking chicken, something about it freaks me out! Anyone else?

 

And there you have it! Now my fridge is stocked with some great grab and go meal ideas. All I have to do is combine a few together! Hopefully this is a habit I can keep up and slowly get better with.

  1. Omg I can’t handle chicken. I usually make a friend or bf touch it when it’s raw. Ew.

    My aunt rubs her potatoes with salt and olive oil and then wraps them in foil before baking and it tastes amazing!!!

  2. Looks great!! I have that same quinoa in my cabinet I never know what to eat it with? Will you eat yours with your chicken!! Let me know what you think about the cauliflower mash..its another thing to make on my to do list!

    • Well I ended up mixing my quinoa with eggs this time, but honestly I have a hard time figuring out what to do with it too! I try to just treat it like rice and eat it as a side. And I liked the mash but it was missing some flavor. Something to work on!

  3. I meal prep every single Sunday – it’s a must! My go-to’s are:
    hard boiled eggs
    muffins
    chopped veggies
    hummus
    and new for this coming Sunday will be overnight oats in mason jars for the week and egg white smoothie (juice? I’m not sure what it is).

  4. Sundays are definitely my day to meal prep. I don’t do a ton, but I always make sure I have some cut up veggies, some roasted sweet potatoes, rinsed beans, and maybe some hard boiled eggs. It only takes an hour tops but it definitely helps when I need something to grab during the week in a rush.

    I leave out the hot sauce and just make regular shredded chicken.

    I always try to make 1-2 meals on Sundays to eat for lunches and dinners during the week. I’m often starving by the time I get home from work and don’t want to wait to cook. I have trouble if I just make loose items rather than a main dish because if I don’t end up making the main dish I planned I end up with leftover quinoa or veggies that go to waste.

  6. This is an excellent plan! I sometimes meal plan on the weekends but get a little tired of the same lunches day after day. I have set aside certain salads with cous cous and quinoa to make and divide up during the week, but it ends up being grilled veggies and chicken. Quite classic and tasty.
