WIAW–Lately

Well hello there!

So this week for WIAW, instead of showing you a full day of food I’m going to show you a lot of the meals that I’ve been eating recently. Chocolate Protein Oat Bran with peanut butter and frozen blueberries (sooo good).

Oat bran mixed with cinnamon, and vanilla Greek yogurt and bananas (added almond butter after picture).

Snacks

Quest Bars (or KIND bars) and chopped up peppers (sometimes carrots as well). This is pretty much a consistent daily snack when I’m at school in the afternoon. It’s really easy to throw in my bag and fills me up.

Lunch/Dinner

More wraps! They’re so good with eggs, veggies and hummus, or just eggs and avocado!

Here’s an egg and hummus wrap with a side salad of kale, avocado, sauerkraut and vanilla fig balsamic.

Warm salad with steamed kale and carrots, 2 eggs (sometimes I use chicken sausage), sauerkraut, avocado and topped with a Vanilla Fig Balsamic Glaze.

And finally, on Sunday I made Elise’s Chorizo & Kale Rice Casserole so that I’d have some easy meals for the week. I cannot recommend this recipe enough! It was so easy and the ingredients are inexpensive (I had most already!).

Since she uses a vegetarian chorizo made with soy (and I’m soy intolerant), I had to replace that with another protein. I used a packet of 2 pre-cooked chicken burgers that were on sale at Whole Foods because they were 7oz and she used 6oz of chorizo. You could also easily use ground beef or turkey, or even red beans would be great!

I also put mine in an 8×8 pan, and I’m not sure if it was that or my oven but I ended up having to double the baking time. Still came out well and was really easy to pack for school:

Do you make bulk food items like casseroles to last you through the week?

Anything you just can’t get enough of right now? (clearly my thing is oat bran…)

  1. Katie your bowls of oat bran look amazing! I tried to pick a favorite to comment on but I just can’t. Who can choose between almond butter or peanut butter and blueberries or strawberries?!

    And the wraps look so convenient and tasty.

    I can’t get enough of egg sandwiches. I don’t know why, but I go to bed dreaming about them and then first thing in the morning I have to have one!

    Where did you find the vanilla fig balsamic? Sounds amazing!

  4. I’ve never tried oat bran – I’ll have to give it a shot soon. Usually I’ll make a casserole or lasagna for dinner, but I let the boyfriend have the leftovers for lunch during the week. He’s a less likely to actually cook himself something for lunch, so this way he has something ready to go all week.

  5. Your oatbran combinations all sound good. I love packing raw bell peppers to bring to work to snack on, almost all of my coworkers think its crazy I eat peppers raw. I was so excited when there was a lb bag of mini colored peppers on sale for $1 at the grocery the other day!

  6. yum that oat bran looks so good; youve got me fancying some now..i havent had any for breakfast in so long.
    i literally cannot get enough greek yoghurt; i think i could eat it for every meal ahha.

  7. This past Sunday I did my first food prep for the week, and it was amazing. SUCH a time saver. Casseroles are one of the best time savers, although I don’t make them enough. Maybe this Sunday I will throw that on my to-do list. I can’t get enough of frozen bananas – when they’re thawing they taste like sweet yogurt/ice cream. Try ’em!

  8. Those wraps look amazing! Please-oh-please tell me that the wrap is gluten-free…and if so…what brand? I have the worst luck with gluten-free wraps…

    Oh, and I am obsessed with chia pudding, and Purely Elizabeth brand pumpkin fig granola. so delish.

  9. I love to make a big ol’ egg bake with whatever veggies we have on hand, and maybe some bacon or sausage. Makes the mornings go so much easier when breakfast is covered!

  10. Wow, good eats, girl! Lately I haven’t been able to get enough of greek yogurt or pickled vegetables. Both are so refreshing, which is great for this summery weather that has hit Oregon 🙂 P.s., I second Hannah (a.k.a. CleanEatingVeggieGirl): avocado on toast is pretty unbeatable.

    I also made and loved that casserole- i used a 9×13 pan and it took about the same time as the recipe says. Have you ever tried field roast sausages? They are soy free and super awesome, with great flavor varieties. My omni parents even loved them!
