Recently I’ve been wanting to get into juicing more, since I know it’s a great way to get nutrients but with less fiber. With all the stress I’ve been dealing with, my stomach could definitely use a little less fiber… You’re welcome. Here are a few great posts that I’ve read about the benefits of juicing:

Now, I know not very many people have juicers and buying juice tends to be expensive, but I was lucky enough to get my cousin’s juicer when she moved so I’ve been trying to take advantage of it. Granted, yesterday was probably the 5th or 6th time I’d used it in 4 months… but I try.
Also, if you’re interested in buying juices, the best places I’ve found are either juice bars that make it fresh, or a few brands from Whole Foods. Here in Chicago I’ve gotten juice from Peeled and Loop Juice in the French Market, both of which I enjoyed.
As for buying from Whole Foods, my favorite (and the least expensive) has actually been the Whole Foods brand itself. I’m not sure if it’s sold everywhere, but they do have it at the North Ave location here in Chicago for any locals. Many Whole Foods locations actually have juice bars inside them, although I’ve never found one! Must be a California thing… I’ve also wanted to try their BluePrint juice, but that stuff costs some serious $$. Average is about $10 a juice! Good lord.
I digress. Yesterday I decided I wanted to make a big batch of green juice, so I headed to Trader Joes, bought some organic green veggies (and an apple) and headed home to make some juice!
Katie’s Green Juice (makes 2 servings)
Ingredients
4 thin slices of ginger
1 granny smith apple
1 lemon
3 cups kale
1 cup broccoli florets
1 head of celery
1 large cucumber
Directions
Slowly add to juicer and juice! Be sure to mix before consuming. If using a high powered blender (like a Vitamix or a Blendtec) be sure to remove any inconsumable parts (skin, rind, etc) as well as all skin and seeds if you’re trying to get rid of the fiber. Also – this recipe is about two servings of juice. You really should consume juice immediately, but I put the second half in a mason jar in the fridge to drink in the morning.
I was surprised that it tasted really good since I just made it up as I went! That’s one thing I love about juicing – it’s easy to use whatever you have on hand!

I just juice ginger and cucumber together. I find that I have to peel my cucumbers though and then dilute it with half water. Haha. Anything stronger really upsets my stomach. But 1/2 peeled cucumber + ginger + ice water makes me feel really refreshed!

I’ve never made my OWN juice, but I have bought a few fresh juices from juice bars and always love them! As much as I would love a juicer, I don’t think I’ll ever buy one… We just don’t have the room in our kitchen, and I don’t know if I’d get enough use out of it to be honest.
Haha you wouldn’t. I wouldn’t have bought the juicer myself, I’m lucky my cousin just gave it to me.

TJs is my favorite place to get stuff for juicing (although maybe Stanleys is better?). You can really stock up on kale, carrots, cucumbers, etc for cheap!
I like green juices the best with lots of lemon!

if you eat low fiber, do you ever eat rice (brown or white)? Or do you stick to quinoa?
I don’t eat low fiber normally, just being conscious of it these past couple of days!

i have tried a green juice when i went to blend. a lot of people didn’t like it, but i loved it, which is why i want a juicer because i know i’d love juicing!

I have a juicer that I sometimes use when I have the produce on hand and time to make (and clean) it all. I recently tried a few of the Suja juices (sold at Whole Foods) and they are bit pricey but SO good. I buy them when I’m busy and I know I won’t have time to juice but still want the benefits.
I am a huge juice fan! I was lured to your website from peas and crayons when I saw you ‘cover photo’ said “don’t trespass my chattel”…. LOL, I thought – must be a law student!! I just graduated from University of Miami Law and took the July Bar! Nice to meet another juicing law student blogger 🙂
