Happy Wednesday!
I’ll be showing you all pictures of my apartment once it’s a little more put together, but there is one thing that you should know. Although I got a great view, my kitchen got a serious downgrade:
Like whoa.
This makes cooking a liiiiittle more difficult, but hopefully I figure out a way to make it work. I’m already planning on buying some extra shelving and an island to extend the kitchen out into the breakfast area, so that should help!
Today’s WIAW came from yesterday, a day that I made a couple meals in my new kitchen. With very little unpacked and not too many groceries, I had to be creative and simple. If you’re new to What I Ate Wednesday, head on over to Peas and Crayons to see what it’s all about!
I woke up around 6:15, headed to the gym at 7:15 and made it home around 8:45. By the time I got out of the shower and was dressed, I only had 15 minutes to make and eat breakfast before heading out to a doctor’s appointment. I made a cup of coffee in my Keurig, cooked up two eggs in some coconut oil, and then had a banana with a little bit of peanut butter from a Justin’s Honey Peanut Butter packet.
Quick and easy!
After my appointment I headed to Starbucks to use the internet and put up yesterday’s post. I had a venti iced coffee with skim milk:
However, their internet basically stopped working. So after trying to get it to work for a while I gave up, had to toss out my coffee and go to Fuel Station a couple blocks away. There I ordered a small chai latte with almond milk, managed to put up my post and then stayed to get some more blog work done and respond to e-mails.
Around 1pm I was getting hungry so I walked home and got started on lunch. I coated a plantain in coconut oil and baked it in the oven for about 20 minutes and then topped it with some peanut butter. Then I mixed up canned tuna with about a T or two of dijon mustard and a Laughing Cow Swiss Cheese wedge and served it on two pieces of lettuce to make wraps. Pretty good!
After lunch I tried to take a quick nap (didn’t sleep so well), talked to a friend on the phone, and then headed to Argo Tea to do some job hunting. I got a Ginger Peach tea while I worked.
Since I didn’t have an afternoon snack (lunch around 1:30pm), I went ahead and grabbed dinner on the earlier side. I picked up a falafel bowl from Falafil and added a few items from their “Mezza Bar” to try out (hot sauces, tzatziki, hummus, etc).
I took it home to eat and had a bowl of frozen grapes afterward. I needed something cool – that dinner was pretty spicy!
Since I ate dinner pretty early, I had a lemon crème Quest Bar a little before going to bed.

Definitely more “coffee drinks” thank I would like to purchase in one day… Good thing I’ll be getting internet on Thursday!

Our kitchen is fairly open, but it’s still not as big as I would like. It doesn’t have much counter space, so that’s a must in our next house. It looks like you have a gorgeous view out your apartment window though – wow!
Haha yea, I’m sorely lacking counter space but I managed to fit most everything in the cabinets!

not having internet is such a pain haha we are bad and rely on it way too much 😉
when we don’t have it we try to go to the local starbucks or something for a little bit or try to do work that does not require it 🙂

Total BUMMER about your kitchen 🙁 If you have seen my videos, you know what my kitchen looks like. I live in there – it’s gotta be big, well, not like MONSTEROUS but enough to fit like 4 people.
And when I have no internet? I GO NUTS!!!!! NUTS I TELL YOU! LOL I find a place that has internet and POACH IT> lol

Aw the worst thing about moving is not having Internet! I was without it for about 3 weeks and almost went crazy. I’m also jealous of your quest bar, I used to eat them almost every day but they are 4+(!!!!) bucks a piece out here. Have a chocolate chip one for me, ok? 🙂

I am currently spending my days job searching too…from the comfort of my couch. I might have to start venturing to coffee shops, though, to change up the scenery!

Wow, I thought my kitchen was pretty small, but you’ve got me beat! Mine isn’t much bigger than yours though and cooking can be a pain because I have virtually no counter space for prep work.
