Creative title, right? Yep…
First off, I just wanted to say I am blown away at the response to my post yesterday about deciding to go to law school! I was afraid most people would just click past the post, but it was great to hear how so many of you have gone through similar experiences.
So today is another installment of What I Ate Wednesday and today’s post comes from, you guessed it: YESTERDAY! Why? Because it’s the only day I remembered to photograph my food! Clearly I blog well under pressure.

Tuesday was my rest day, which I scheduled because I had a chiropractor appointment in the morning, which I knew would take up all my workout time. I was up early (the appointment was at 7:30am) and started my day with hot water with lemon, and then for breakfast I had a bowl of 2% Fage yogurt (with a little almond milk to thin it out), peanut butter and sliced banana. Quick and easy.
I’d like to note that I’ve mentioned before about dairy possibly upsetting my stomach. Well, after one of these yogurts on Sunday, a latte on Monday and this yogurt this morning, I’ve learned I can handle dairy, but not a lot and not every day.
Also, I’ll share more about my Chiropractor appointment next week. I got a few ideas of what’s going on, but it was really just a general assessment and they took a couple x-rays, but I won’t go back until next Tuesday to go over everything with the doctor.
After I got back I started my laundry and was ready for a snack. I had a sliced bell pepper with a tahini sauce on the side. I just mixed 1/2 T tahini, 1/2 T chickpea miso, 1 T almond milk, a little pepper and a splash of lemon juice. It was really good! I also had a couple mugs of green tea.
After finishing up my laundry, some school work, and lots of folding, it was time for lunch. I made a bowl of polenta (using half water and half almond milk) and then added in some sautéed zucchini, spinach and chicken sausage (from Trader Joe’s) with a little pepper. Again, not bad if I do say so myself!
I also had several bites of spaghetti squash while cooking, since I was pulling that out of the oven at the same time.
After running around like a mad woman trying to get passport quality photos for my Bar exam application and get a form notarized, I finally made it to class at 4 and munched on an apple and an Almond Coconut KIND Bar at the beginning of class, along with a cup of coffee from Starbucks.
I’ve always got to have a picture drawn in paint, that’s why you keep coming back, right? My mad skillz…
Once class was over at 5:50, I headed home (it takes about an hour to get home) and was so glad I’d already baked that spaghetti squash! For dinner I went back to an old favorite: spaghetti squash spaghetti! Rather than using ground turkey like I used to, I just sliced up some chicken sausage and sautéed it along with some spinach and added marinara sauce.
For dessert, I made Katie’s Voluminous Ice Cream, but added cinnamon into the mix as well. I ate it with a protein chocolate sauce (1 T sunwarrior protein powder mixed with 1 T dark chocolate cocoa powder and water).
Sounds good, right? It was… and I forgot to take a picture. #Fail.
Oh well. Perfect way to end the night!

Have you ever bought tahini or miso? They’re new to me!
I love adding tahini into humus, never tried miso other than the soups at Japanese restaurants. Spaghetti squash with chicken sausage and spinach sounds really good.
I need to try the tahini/hummus combo, that sounds really good!

I use Microsoft Paint to copy and paste my screen shots sometimes, but that’s about it. I’m left-handed, and I could never draw anything very well with a right-handed mouse!
Oooo I never thought about how mouses are made for right hands! Rude.
Voluminous ice cream? I need me some of that action!
You certainly do! Definitely not the same as real ice cream… but fun to make!
Cinnamon sounds like the perfect addition to that ice cream. Oh well. Picture next time! 🙂
That’s a great idea to thin out your yogurt with milk. Almost makes it like a smoothie in a bowl. Sounds awesome.

I’ve never bought tahini or miso! And now I’m obsessed with PicMonkey – no more Paint!
The only problem with picmonkey is you can’t draw in it! That’s why I still use my beloved paint 🙂
I love the combo of miso + tahini. Another good one is Tahini + sriracha + lemon juice.
Regarding the dairy thing, most people who are lactose intolerant don’t have a problem with yogurt due to the probiotics. I can eat yogurt all day, but can’t touch ice cream.
Tooo tahini and sriracha?!? I never would have thought of that! And my doctor originally told me that yogurt should be fine for that reason, but I just find that if I have it too often (and maybe it’s because greek yogurt is so thick?) it upsets my digestive system.
I’ve only ever used tahini to make hummus – I have a jar but I never know what else to do with it!

I’ve never used tahini in my own cooking, but I LOVE it with felafel at Greek restaurants.

I haven’t used paint in FOREVER. I also haven’t had a PC in forever so it’s probably Apple’s fault 😉 Your eats looked really good! That polenta idea is right up my alley!

That Starbucks picture is super gorgeous. Have you thought about becoming an artist? ;). Your tahini sauce look fab. Almost like a runnier take on hummus or something. Mmmmm.

I am loving the Paint skills! I still occasionally use Paint if I need to do something quick and easy and don’t want to open up Photoshop. Your spaghetti squash dinner looks amazing. And the chicken sausage from TJs is one of my favorites. In fact, I have some down in the fridge calling my name…
