Good morning and happy Wednesday!
We’ve made it halfway through the week and over halfway through February! Where did the time go!? Ah well, anyway since today is Wednesday that means its time for another WIAW post! If you’re new to What I Ate Wednesday, it’s a collection of blogger’s who post one full day of eats. Today’s WIAW post comes from Saturday! It was a random day of small meals/snacking and I thought it would be great to show how I eat on the weekends, which is much less meal-oriented than a weekday.
My morning started out with a big bowl of oatmeal – a new recipe for you all!
Peanut Butter Cup Oatmeal
Ingredients
1/2 cup oatmeal
1/2 cup almond milk
1/2 cup water (+ 1/4 cup later)
1/2 T ground flax (optional)
1/2 T Hershey Special Dark Cocoa
1 scoop Sunwarrior Vanilla Protein Powder
1-2 packet(s) stevia
Optional – 1 T peanut flour
1 T peanut butter (topping)
Directions
On the stove top, heat up the oatmeal, almond milk, water and ground flax until it boils. Turn off heat and cover. You can skip this step, but I prefer the mushy texture that this creates by letting the oatmeal really soak up all the water.
After about 20 minutes, add more water (about 1/4 cup) and turn the heat back on. Add cocoa powder and stevia and heat. Then, when there’s still enough liquid left to soak up the protein powder, add the protein powder (and peanut flour if you have it).
Pour into a bowl, top with Peanut Butter and enjoy!
This was a great way to get a morning chocolate and peanut butter fix!
After breakfast, I did a lot of school work and cleaning around my apartment. After about 3 hours of this I decided I needed to hit the gym for my run, but I knew I was going to be hungry again soon and I hate running hungry, so I grabbed a piece of Udi’s bread, topped it with 1/4 tsp melted coconut oil, then stevia and cinnamon. Haha my version of cinnamon toast with what I had in my apartment.
When I got home from my run and Walmart Neighborhood Market for a few necessities I whipped up a smoothie with frozen peaches, spinach and protein powder, topped with “chocolate sauce” made with almond milk, stevia and cocoa powder.
A little while later I was ready for a real lunch, so I threw together some crockpot shredded chicken with roasted zucchini, spaghetti squash and marinara sauce:
After that, it was even moooore studying! Haha I got a lot of reading done on Saturday but it was pretty painful. I had plans to go to Whole Foods with my sister in law but she wasn’t able to go until a little after six. I knew I wanted to pick up dinner from Whole Foods but I didn’t want to show up hungry (hungry grocery shopping is dangerous…) so I had a sliced up bell pepper dipped in tahini.
I got the hot bar from Whole Foods, although I completely forgot to take a picture… It did, however, look incredibly similar to this:
A while after dinner I ended up heading out to meet up a friend for drinks, and had a few of these:
Not the healthiest of things I could have done, but life is about balance, right? I ended up getting to bed around 2am… Haha not a typical Saturday for grandma over here but I’m sure glad I went out of my comfort zone.

peanut butter and chocolate oats! Yum- a girl after my own heart!! Also, I hate hungry running too! I always need a little something in my tummy. And I hear you on the “grandma” thing. Since I’ve graduated college (when I could hold my own partying…), and been in grad school/working, I’m exhausted on the weekend and my body no longer knows how to be out in the bars till 4am! But, like you, I still want to socialize with friends, and not isolate myself, so sometimes I bite the bullet and go out late. This weekend, I was lucky. I was having drinks with one of my older friends so we both were totally down for an earlier start and end time 😉 I was in bed by 12am. Much more reasonable for me 😉 Have a great day!
We are definitely the same – I just can’t go out like I used to in college, but I try to make exceptions! I love hanging out with my blogger friends though because we’re all semi-grandmas!

And I swear by the healing properties of the occasional bar night. I’m hoping for one of those this weekend, actually! On Saturday, I think I was in bed around 12:30.

I actually am not a huge fan of chocolate for breakfast. As a kid I used to eat chocolate cereal on a frequent basis, I’m sure, but it’s just not as appealing to me these days. I do enjoy chocolate things at brunch. I think my cutoff is like 9 or 10 AM. I love the Whole Foods hot bar. The only bad thing about it is having to decide on what to eat. 🙂 Have a great Wednesday!
I wasn’t ever allowed chocolatey cereal when I was little, so maybe that’s why I’m into it now!

cocoa powder versus sweetener definitely depends on personal taste though – some might think this is perfect but others might not think its sweet enough!
I have added cocoa powder and chocolate chips to my morning oatmeal and love the healthy chocolate fix in the morning! My weekends are typically spent doing lots of school work too.
I loooove adding chocolate chips because they melt so nicely!
That spinach smoothie/soft serve looks amazing!!!! Totally need to make it with the chocolate sauce on top!
I’ve become obsessed with this chocolate sauce! I make a little serving of it on the side and add it as I work my way down the bowl…

I’ve tried to make peanut butter cup oatmeal so many times and have never had any success. The cocoa powder never seems to make things taste as chocolate-y or peanut butter cup-y as I hope. Ah well.
I think I got to bed around…1:45 this past Saturday? Somewhere in that neighborhood. I went out with a friend to a fundraising event for Sideshow Theater and Girls Rock! Chicago called CLLAW: Chicago League of Lady Arm Wrestlers. Simultaneously the weirdest and most hilariously awesome thing I’ve been to in Chicago. It made me feel like I was back in college again, and it was a great time. Totally, totally worth the late bed time.

I am generally not much of an oatmeal person, but chocolate and peanut butter oatmeal sounds pretty darn good!
I love using coconut oil in place of butter on toast or for grilled cheese sandwiches. It is such an awesome replacement :).

I’m all about chocolate for breakfast! 😉 I don’t think there’s a time when I’m NOT all about chocolate. Haha! I love to add cocoa powder to my oats or sprinkle a few chocolate chips on them. Your combo sounds delicious!

I’m pretty much a grandma too when it comes to my sleeping habits, but going out every once in a while and staying up late is definitely a nice change… even if my body refuses to sleep in and I wake up at the crack of dawn tired the next day. Nothing a little chocolate for breakfast won’t fix though 😉

I LOVE chocolate for breakfast. I am so trying this out when I get more oats this weekend (finished the last of mine this morning sadly), and I went to bed on Saturday at 1 since I went out, too….I couldn’t last very late though haha. Nicely done making it till closing time…in Pittsburgh anyway 😉
