I hope you’re all having a good week so far! I’ve only got 2 full days and then tomorrow night I’m off to Charleston for my friend’s wedding! Since I’ve got a million things to do, let’s move on to this week’s WIAW! Today’s food is from Monday (per usual…). I was ridiculously hungry all day but managed to get in some colorful meals!
If you’re new to What I Ate Wednesday, head over to Peas and Crayons to see how it all works!
I woke up early and was already hungry, so I grabbed half a banana and some almonds before heading to the gym to do an upper body workout for Tina’s Best Body Bootcamp.
When I got back I had some coffee…
And then my breakfast, which was (shockingly) a sweet potato with 2 over easy eggs and sriracha (no avocado, this was a recycled photo).
I headed to school and after class I was starving, so I had oatmeal with nuts from Starbucks while I did a little work.
When I got home I was already hungry again, so I had lunch #2: sautéed peppers, carrots, zucchini and 1 Trader Joe’s chicken sausage.
A little later I had a bowl of protein ice cream!
After my physical therapy appointment I got back hungry so I threw together another quick meal (shockingly similar looking to lunch…). Sautéed peppers, carrots, spinach and 2 Trader Joe’s chicken sausages.
For dessert I made an interesting chocolate mousse concoction… It was pretty good but not amazing: cocoa powder, stevia, almond extract, and 1.5 T of almond flour. I also had a handful of walnuts! So good.
What are your repeat meals recently?
Any interesting desserts out there?
throw some eggs in with those veggies and chicken sausage and our repeat meals could be almost identical. i tried to stop myself from eating the same breakfast over and over again by not buying sweet potatoes at the grocery store last week, but now i’ve just been putting eggs on an english muffin. i can’t get over how much i love the avacado/sriracha combo and i will be forever indebted to you to for introducing me to it. seriously, as if i didn’t adore you enough.
Haha I saw that you switched out the sweet potato for an english muffin! I have to eat something different tomorrow since I’m out of sweet potatoes! I might just make plain oatmeal and top it with eggs!
Those sauteed look great. I love the taste of roasted carrots.
My repeat meals are salads. Not a terrible thing to repeat I suppose, but they all look the same. Sometimes I change out the chicken for tuna though. Lol. That’s my “change.”
Have fun at your friend’s wedding! Sounds fun.
Hey, if it’s healthy and good no reason to change it!
Mmmm I’ve been obsessed with sweet potato for awhile now too. My dinner Mon and Tues has been sauteed sweet potato, onion and spinach topped with goat cheese. I love the sweet potato/egg idea!
I love goat cheese, good choice!
Seriously, what a great day of meals. I love how veggie packed it was =) Have a wonderful Wednesday!
Thanks, Jessie, you too!
My repeat meals involve eggs – I could eat them for every meal!
I eat 2 every morning so I try not to eat them more than that! I go through a dozen every week!
Your meals always look amazing! Food envy. I am horrible about getting in a food routine and eating the same thing, BUUUUT if it’s not broken then don’t fix it.. right?
I would like to put lunch #2 on repeat. Love TJ’s chicken sausages!
Me too, I’m in love!
I love trader joes chicken sausages! and i repeat meals ALL the time..its so much easier and I find myself craving the same things!
I’m the same way, I get in food ruts and I just want the same things over and over! Nothing wrong with that if it’s healthy!
I’m such a meal repeater, it’s ridiculous. I’m just glad I only have to cook for myself because I’m sure I’d torture anyone else with my meal repeats. If I want something five days in a row, it’s no problem. 🙂
Haha I can’t imagine trying to cook for anyone else!
Oatmeal oatmeal and more oatmeal…it’s what I have every morning…my body now craves it which is crazy since I hated it until recently haha…decided to try out a few recipes I’ve seen in the blog world and they hooked me! I love that egg, sweet potato, avocado and sriracha combo too 🙂
Haha I had oatmeal every single morning for all of last year, I just switched up breakfasts after the marathon and I’ve been on the sweet potato kick since then!
I usually have oatmeal a lot for breakfast, but it’s been so warm outside this week, I’ve switched over to cold cereal!
it has been crazy warm! It was 70 here on Monday!
The concoction looks like chocolate heaven even if it didn’t taste amazing! You know me, I don’t repeat a whole lot but loving whipped oats!
I am always amazed at how you’re rarely repeating!
Me meals have totally been repeat meals: oatmeal or microwaveable almond flour english muffin for breakfast or lunch.
I need to get my hands on some of that chicken sausage, it sounds so good.
It really is, my favorite is the jalapeno!
I love eating a rainbow!! Yummy-looking breakfast too! I have to clean out my fridge this week, but once I get to parents’ house for Christmas I will be experimenting like crazy!
Haha I’m cleaning out my fridge this week too, since I’m out of town all weekend!
Yay for weddings! And I love all the sauteed veggies!
I still have yet to try stevia-I’m weirded out by it for some reason. I’ll just try some of yours.
I will bring you some, along with a coloring book.
I think your breakfast & dinner are pretty tasty looking, yum! I find your dessert creation interesting… curious to try something similar, but Stevia affects my tummy sometimes. 🙁 I’ve been doing a repeat breakfast of avocado eggs & bacon. So good!
Stevia is the only thing that doesn’t affect my stomach! Any artificial sweeteners or regular sugar do!
Been loving the oatmeal lately, and tofu. I actually never tried tofu until I picked up some marinated tofu cubes at Whole Foods on a whim last weekend. I like them sauteed in a hot pan to get them crispy. Yum!
I’ve been repeating waffles for breakfast and salads with roasted veggies for dinner like crazy the past few weeks. I just can’t help myself, sooo good!
I’ve been changing up dessert and having a small cup of cereal later in the evening. It’s not as sugary and gives me a carb boost before bed which helps with early morning workouts!
When I got a nutrition plan before the marathon I was told to have carbs before bed to help with morning runs!
I love chicken sausages! I need to go to TJs (just opened here in SLC) and get some. Your meals with ’em look awesome!!!
You must go! I LOVE TJs and the chicken sausages!
I’ve been eating toast with honey and raw almond butter for breakfast or a snack nonstop! I can’t get enough of it!
Oooo that sounds good!
I need to try that sweet potato combo, it always looks good and filling! My repeat eats are eggs+greek yogurt+salsa and Tina’s two ingredient pancake!
It’s delicious! I think I’ve started a trend…
Your stir fry looks delicious! I tend to repeat quesadillas ALL OF THE TIME! They are just so easy and tasty 🙂
Oooo you can never go wrong with a quesadilla!
yumm so colorful! im so boring with my meals lately, smoothies salads stirfrys and eggs are like the main ones! i cant get enough though lol
My repeat meals are oatmeal – I eat it for breakfast almost every day!
Also I love chicken/turkey sausages. It’s awesome that they’re so much healthier than regular sausages, but still so tasty!
Busy days call for easy meals. Those sound pretty healthy and tasty though! I repeat breakfast the most. I’ve been eating a bagel with some homemade chocolate almond cashew butter I made. That was just because I was leaving Chicago yesterday and didn’t want to buy anything. Roomy works at Sbux so we get a lot of bagels and stuff that they’d throw out otherwise. Usually I’m a smoothie or oatmeal girl. Desserts…well, I’m a big fan of banana soft serve, or mug brownies where you make a single serving brownie/cake mix (equal parts cocoa and flour, some coconut oil, honey or sweetener, vanilla, liquid) and microwave for one minute.
