Hello! I hope you all had a great weekend and are rested and relaxed for the new week! Haha I am anything but! This weekend wore me out, I had my 15 mile run, I flew home to Kansas City, and then yesterday I ran the Susan G Komen 5K in Kansas City with my dad and Bailey and then celebrated my mom’s birthday! Whew! It was crazy and today I am just as busy, I hope I can sleep a bit during the drive out to Colorado tomorrow!
So let’s catch up a bit, starting with the 5K! Before the race I powered up with some Chobani! Haha stolen from my Dad’s stash and it even matched the pink theme!
I know I’d just run 15 miles the day before, so I tried to keep it slow for the race. I’d intended to walk if necessary, but I was surprised that I felt pretty good. Not tip top shape, but I was able to keep up with my dad and Bailey stayed with us, we crossed the finish line together!
When we got back, my dad made an omelet breakfast for the family. We all got to choose which toppings we wanted, and then he made them up for us! He wanted me to show you his secret technique (I like to call them omelet tacos…). He pours the egg mixture into a pan and then puts the top on. He says this keeps the steam in and makes the eggs fluffier.
Here’s mine: ham, mushrooms, spinach and a little cheddar cheese! Thanks dad!
After breakfast, my dad and I headed to Whole Foods to pick up some food for my mom’s dinner, a hiking store (Backwoods) to get me some boots for my hike on Thursday, and then Peachwave to get some frozen yogurt!
I did a little blog reading, rhythmic gymnastic and golf watching, and a few other errands in the afternoon. Then it was time for my mom’s birthday dinner! We’d invited over my grandparents, so there were 6 of us!
We had some hummus and artichoke dip with crackers, cucumber slices and carrots for appetizers, and then for dinner my dad grilled up some asparagus and pork chops and I made sweet potato fries and a fruit salad.
For the sweet potato fries, I just chopped them up into fry shapes, tossed them in olive oil and salt and then roasted them for an hour at 400 degrees. It may take less time if you make fewer, but mine were pretty packed onto the two trays so that’s why it took a whole hour.
We even bought some mini gluten free brownies for dessert, and decided not to tell anyone they were gluten free until after they’d tried them!
Have you ever participated in a Race for the Cure event?
What would be your favorite birthday dinner at home?
Sounds like a great day of running and eating 🙂 Just like my Sunday!
My favourite home birthday dinner would have to be an outdoor barbeque with lovely, fresh salads and a large fruit platter for dessert 😀
I love outdoor BBQs!
Congrats on running 15 miles and then running a 5k! So great that you all finished together! Happy birthday to your mom!
Thank you, Laurie!
That omelet DOES look good! I’ve always had problems making them so I might need to try your dad method and put the lid on!
Haha he was so proud of it!
I love omelettes but mine never turn out that great, which is why I stick to ordering them if I go out to eat. Your dad’s look SO good! I may have to try making them that way!
Lol I’m awful at making them too! I usually just end up scrambling it all together…
Wow! Congrats on running a lot of miles this weekend! I’m glad your 15 miler went well 🙂
Your sweet potato fries look awesome, I’m never patient enough to let them cook for very long so I never get the crispy effect!
Lol I’m never patient enough by myself, but I had to be for everyone else!
Happy birthday to your mom. That omelete looks amazing. I have never participated in a race for the cure race but I am curious in doing one now.
It’s a great race – they have a 10K in Chicago in September! I did it the past two years.
Cool I will definitely look into that! Congrats on your PDR! You go girl
Nice job on your 5k race! It sounds like you all had a fun weekend together – I’m so glad! Happy Birthday to your mama! 🙂
Aww thanks! It was a fun weekend!
It looks like your dad knows what he’s talking about with those eggs. They do look super fluffy!
Haha he sure thinks he does 🙂
That is so awesome that you were able to participate in the Race for the Cure; I hope you enjoyed it!! And those crackers, veggies, and dips look so delicious; I could probably eat an entire bowlful of hummus in a very short period of time–it is soooo amazing:) The sweet potato fries look great as well; I love making them at home, even if I can never seem to get them crispy without burning the outside…Oh well, soft sweet potato fries are delicious as well:)
Haha I love them burned or not!
I’ve done Race for the Cure a couple of times. It’s such a great cause, but it’s always really crowded, and it’s hard to move very fast!
Haha it was super crowded, but luckily they did a timed runner wave at 7:30 and then walkers at 8:00, which made it easier. Over 21,000 participants!
way to play it smart and listen to your body. Your dad sure is a good cook, those eggs and sweet potato fries are making me drool. Glad you had a great weekend!
Thanks, Alex! Hope you had a good weekend too!
Oh man, I love my dad’s omelets. The last time I remember him making one for me was at the beginning of the summer of 2010, which was way, way too long ago. They’re always a super special treat at my house (apparently, since it’s been so long since I last had one haha), but they’re just the best.
HAha waaaaay too long ago! Gotta make that happen again!
WOW! You’re amazing! 15 miles + 5 miles the next day?! GO you!
Happy B-day to your momma!
That is a good idea about the lid and omelletts….. interesting 🙂
Haha he’s a creative chef
Well done on that race after such a long run the day before! Those eggs do look very fluffy!
Thanks!
Phewww all of that running Katie, great work there! Happy Birthday to your Mom and what a way to have a nice Sunday and celebrate 🙂
Haha it was exhausting!
AHHHH i can’t believe you did the race for the cure! you’re such a beast 🙂 way to go. i felt like yoga was about all i could handle, lol. and seriously, that omelet looks amazing. i’m going to start trying that secret trick!
I cannot get over how adorable your dad is. I love the fact that you two ran the race together, how he insisted you showed us his omelete secrets, and that you two go to whole foods together. 🙂
Happy Birthday to your momma!
Those are some zippy looking omelets! Great race, guys! 🙂
