Haha, now that’s an oxymoron for you: First Last day of school! I (currently) have zero intention of going back to school after I finish law school at the end of the year, so Monday was my very last first day of school! Haha sorry no picture of my outfit, I wore shorts and a plain shirt… I only had one class to go to. Anyway, I thought I’d share with you my eats from Monday! I started off my day with a workout at the gym where I did 15 min on the elliptical and then I did this ab circuit and this upper body strength circuit from Peanut Butter Fingers! I love Julie’s workouts when I’m looking to mix things up!
Then, by the time I’d showered, meandered around, found something to wear, I realized I had… oh wait 15 min to make breakfast, eat it and get my butt out the door! Oops! I made Tina’s 2 Ingredient pancake (no photo), however mine looked nothing like hers… haha it was so big I could not for the life of me flip it with my little spatula! I had to flip it in 3 parts. So I just smothered it in some almond butter and called it a day!
I headed downtown for class and then afterwards I did some much needed shopping. I gained back a little weight over the spring and avoided buying new jeans. I’ve realized I’m at a healthy weight (although I don’t weigh myself anymore) so I just needed to get some jeans. I found a good (and inexpensive) pair at H&M and also got a cute striped top at Old Navy! Successful.

In the middle of shopping my hunger struck, so I stopped and sat at an area outside an office building with trees and benches and enjoyed my lunch. It was 1/2 of an avocado, 1 tomato and a ton of shrimp mixed up with dill, salt and pepper, balsamic vinegar and olive oil. So good!
I also munched on this KIND bar throughout the afternoon:
By the time I got home I was pretty hungry but knew the dinner I’d planned would take some time to make, so I sliced up a bell pepper and ate it with a mixture of applesauce and PB2… I don’t recommend this mix. I wish I’d had some hummus! I also sipped on a chia kombucha drink that I’d bought this weekend.
For dinner I’d made a meatloaf! The recipe was from paleomg. My loaf was made with beef (the original recipe called for ground chicken, but the beef was sold in exactly 1 lb packages and I figured it would be fine). I also didn’t have any basil so I left that out. The cooking time took a little longer, but it turned out well! I served it over some “zucchini noodles” with marinara sauce and nutritional yeast.
For dessert I had chocolate protein ice cream with some PB2 and maple syrup on top.
A little later I was feeling hungry/snacky so I had a BIG bowl of popcorn. And yes, some of it’s burnt… these things happen.

You just need a giant spatula! Do they make those? Lol!!
I need one as big as my face! Lol granted the one I used is the size of my hand without my thumbs or fingers, so pretty small…
I tried making Tina’s 2-ingredient pancake yesterday for the first time too and had a DISASTROUS time trying to flip it!! It was definitely a very big pancake and almost too soft and fluffy to be flipped. I tried cooking it a little more slowly and it still didn’t work right. That being said, even as a “pancake scramble” it still tasted awesome!! I put PB on mine 🙂
Haha exactly, even though it didn’t come out right it tasted amazing! I might try doing 2 smaller pancakes next time…
Haha I had the same problem with needing to buy jeans in a bigger size earlier this summer! I put it off for so long, but it felt so good to finally slip on a pair of jeans that fit! 😀 I shop all over the place but some of my favourite stores are H&M, Aritzia, Urban Outfitters, and Forever 21.
Your lunch salad looks so good! Tomato, avocado, and shrimp are always such a good combination!

I don’t shop for clothes because they don’t fit!!! Oddly, I have had good luck with Old Navy and pants. Your new jeans are super cute! I’ll have to check it out!
Haha I’m the opposite, Old Navy pants never fit me because I’m an apple shape and they seem to be more made for pear (Aka if it fits in the waist it’s baggy everywhere else!)

I love your comment about Forever 21. I worked there for a summer once, about four years ago. I could never imagine working there now. It’s just too overwhelming of a store and yes, they do have a lot of stripes! The striped shirt looks super cute on you though!

my go-to stores for clothes are Forever 21 and H&M – mostly because their stuff is a lot cheaper than department stores. and i can’t bear to fork over a ton of money for clothes! just the other day i stopped into urban outfitters for the first time though and completely fell in love. i wanted all of their vintage shorts and a million cute tanks they had! unfortunately everything was a *bit* more expensive than i was willing to pay so i walked out empty handed.. but i think i’ll be making a return trip to actually buy some stuff before i leave for school!
Lol I shop there too because I’m super cheap! And I LOVE Urban I just can’t afford it!
I love your shopping purchases–they look great on you! H&M is such a great store. I do a lot of my non-workout clothes shopping at Target, which is nice because that way I can save money and spend that saved money on workout clothes. 🙂 Good luck with your final year of law school!

I’ve never tried on H&M jeans but I was just in there last Friday and bought an adorable blazer and was drooling over some of the striped tops (yours is super cute!). Lots of my clothes are from The Limited but I’m trying to branch out.

I just generally try to avoid clothes shopping in general haha. Nine times out of ten it’s an all-around traumatic experience for me, given my complete and utter lack of ANYTHING resembling fashion sense and/or confidence, and I since I prefer to avoid crying in dressing rooms, I just wear the same clothes over and over and over again until they 1) wear out and I’m forced to replace them or 2) even I’ve finally gotten sick of how awful my clothes look, so I get rid of them. Seriously. This may just be my answer to the question, “Why do you run?” — because no one cares that my clothes don’t match, aren’t flattering, and since everyone gets the same shirt, no thought was required on my part. Oh, if only I were kidding…
lol my problem was my clothes didn’t fit, so I really had no choice! But yea, not a huuuuge fan of trying things on.
Jeans shopping SUCKS! I really need to go (I don’t own a pair that fits me currently) but I need to find time when I’m in the right mindset.

I have an H & M in my city but I’m pretty sure I’ve only been inside it like, twice. The jeans are super cute so apparently I need to take a look in there again next time I need a pair?
I’ve been feeling like I need a full wardrobe overall lately. I’ve been a jeans-and-tshirt girl for years but I need to change it up a little bit.
And although I love Forever 21, their shirts are weird right now. NONE of the tops they have right now are even remotely flattering on me.
Lol I’ve been shopping with the thought in mind that in 1 year I have to be a real grownup with a real job… Haha and forever 21 is in a very weird stage… all their shirts are see-through or cropped! Annoying.
That’s my thought process too. Right, adulthood.

For the pancake, make sure it’s well sprayed –oil or spray–and on MED heat for awhile. Sometimes they just don’t flip well though…. 😉

zucchini noodles?! AWESOME! When the first day of school comes around I feel like a kid again. I always go out and buy a new outfit and get a new haircut! Some things never change. 🙂

I love the turkey meatloaf recipe from Skinny Taste. I made it this week after not making it in ages.
My mom usually makes a turkey meatloaf, this was the first time I’d made it with another meat!

Not going to lie, pb2 and applesauce does sound a bit gross lol, I will not be trying that one deary! I think the striped shirt looks quite nice on you, lovin the blue color with your hair too! mmm popcorn, something I haven’t had in ages! I mean I always have those cooky kettlecorn flavors from popcorn indiana, but sometimes a regular oleee bag of popcorn hits the spot just right

I actually have a hard time buying clothes (especially jeans) because I’m tall but have really narrow hips. It’s such a pain! But, I’m usually able to find ones that fit at Abercrombie or Lucky- they’re just expensive. Boo!
I think most everyone has some issue with jeans! I’m apple shaped so once I find a pair that’s not too tight in the waist, they’re baggy everywhere else!
