Hey everyone, Happy Friday! I hope you all have some fun plans for the weekend, I… don’t. Unless you call an MPRE Review Course that reminds me I have to take an ethics exam in 2 weeks which I have not even gotten the book for fun. Oops. But don’t worry, I was assured by several people that they studied only during the week before the exam. This will be fun!
Anyway, enough about my type-A personality falling to the wayside this month, let’s move on to more exciting things! I have a recipe to share with you all, but first I wanted to mention what I did Tuesday night: My first ever BULLS GAME!
While living in Chicago my hope is to take advantage of all the pro-sports. So far I’ve checked off the Cubs, the White Sox and the Bulls. Still need to get the Bears and Blackhawks in there… Although I doubt the Bears will happen since those tickets cost $$$.
Back to the Bulls. My brother is a HUGE fan and my sister-in-law grew up watching the Bulls so I knew they’d be game. I found some cheap pre-season tickets online and we were set to go!
I had never even been to the United Center, where not only the Bulls and Blackhawks play but where big concerts often take place, so it was fun to see. They had a big statue of Michael Jordan out front!
My brother insisted we circle the center so I could see everything, including the Bulls’ championship trophies. My brother grew up loving the Bulls and my mom even took him on a special trip to Chicago when he was about 12 (I think??) to see Michael Jordan play before he retired.
The game ended up being even more fun (and fast!) than I anticipated. I absolutely loved their mascot, Benny the Bull. It was fun to watch him walk around and interact with people on the sidelines… as well as angering a few of the refs.
I was impressed that the stadium had some gluten free food options, although not many. I bought a salad for dinner and it had pasta on it! I just dumped the pasta off and at the rest. Their gluten free options were mostly things like Pop Chips and gluten free beer and cider.
I’m not a big pro-basketball fan, but I enjoyed watching the game because I played basketball growing up, so I actually understand all the rules. And the rules are pretty simple… haha. Plus, the Bulls won! Always makes the game better.
So now, that recipe you’ve all been waiting for. PUMPKIN PIE! I threw this together randomly earlier this week and it made an appearance on my WIAW. I got several recipe requests so I re-made it with measurements and it turned out about the same! I intended to make a cake, but I think it had too much liquid so it turned out to be more of a pumpkin pie consistency, which I loved!
Ingredients
2 T Bob’s Red Mill Garbanzo Bean flour
1 packet stevia
1/4 tsp baking soda
1/2 cup canned pumpkin
1/4 tsp vanilla
3 T egg whites
2 T applesauce
2 T milk of choice
Directions
Combine dry ingredients then mix in wet ingredients. Microwave in a microwave safe bowl for 2.5 – 3 minutes. Depends on microwave, mine took 3 minutes. Stop when you can touch the top and it doesn’t stick to your finger! Less time in the microwave gives it a more pumpkin pie texture, rather than a cake texture. Also, this is pretty big! The bowl that I made it in is a 2 cup sized microwave bowl, much bigger than my protein cupcakes!
Are you a pro-basketball fan?
Do you remember all the Michael Jordan hype when we were growing up?
Let me know if you try and like the recipe!
Not going to lie — my favourite Michael Jordan memories are from the movie Space Jam!! haha. #sorryimnotsorry
I love that you’ve pushed your type-A personality aside for a bit (even if not on purpose!) — I definitely think it`s necessary sometimes.
I`m glad you had fun and I`m DEFINITELY going to be giving that pumpkin pie a shot (if my pumpkin lasts long enough — I`ve been eating roasted chunks with PB recently for a snack — delicious!).
Haha that’s what I think of too!
i was never that into basketball but it was tough not to get swept up in the bulls when they were repeating the three-peat. anyone remember that? also the most important thing about the united center – did they throw burritos from a blimp down on the crowd? chipotle does an awesome promo there where they toss burritos out to people. i never got one but it looked amazing.
try to keep an eye out for deals to bears games because i have been to all the pro sports in chicago and i can honestly say that soldier field is hands down my favorite and the bears are the most fun to watch. although since i love football so much that could just be me being biased. maybe i’ll come to chicago and make my dad take me to a game sometime and bring you along 🙂
Um yes, you should just come back and we’ll all go to a game. Yes? Okay good.
Microwave Pumpkin Pie… YUMMYYY! Pinned!
I remember liking Michael Jordan a lot, but that probably had more to do with Space Jam than anything else – I loved that movie when I was a kid!
Other than that, I’ve never really been a basketball fan. Probably because I was never very good at it!
Haha I always think of that movie when I think of him!
sports….boringg….throw on some real housewives and i’ll be over…
haha or some Crossroads with Britney?
How fun! I grew up going to lots of Phoenix Suns games since my dad had season tickets. I love going to pro basketball games… It’s probably my favorite sport to watch.
That sounds fun! I grew up watching football, we don’t have a pro basketball team anywhere near Kansas City!
I am not a pro-basketball fan… but I’m a huge pumpkin fan!
That pumpkin pie looks soooo good. Thanks for sharing. I’ll definitely be making it this weekend.
I hope you like it!
LOVE the Bulls!! They are my favorite basketball team, hands down! I cried when BJ Armstrong was picked up by the Raptors in like 95? I also love the Bears and my favorite team ever is the White Sox, so good job with that 🙂
Haha I’m glad I’ve met your approval, lol but I know nothing about BJ Armstrong or any of the Bulls players other than Jordan!
totally trying that recipe, looks delicious!
I’m glad you had fun at the Bulls game!!
I used to be a huge Detroit Pistons fan but unfortunately the entire franchise has had a lot of trouble in the past few years and I’ve lost interest. I do love college basketball though!
I’m definitely more of a college basketball fan, we didn’t have any pro teams near Kansas City
I’m excited to try this pumpkin pie! I need a new healthy nighttime snack to add to my rotation 😉
I hope you like it, Molly!!
I loved watching Pro Basketball with my dad growing up. We were Utah Jazz fans when they played the Bulls. So I remember those games well, Jordan was always awesome to watch, even if I was rooting against him 🙂
I agree, he was pretty great no matter who you’re rooting for!
Ehhhhh I’m not really into the pro sports scene aside from baseball, which I’m only a casual fan of anyway. I’m all about passion for the game when it comes to sports, so passion for making millions of dollars kind of kills any interest I have in the pro scene. I went to a Bulls game when I did my internship in Chicago, but we were literally one row from the top row of the arena, and it’s kind of hard to get into a game when you can barely see the players on the court haha. Give me college sports, though, and I’m a happy gal 🙂
Haha we were pretty high up too, it made me nervous how tilted I felt!
I’ve never been to any Chicago pro-sports games, but I live really close to Soldier Field, and run by the Bears tailgaters all the time…that’s kinda like being at a game, right?
Also–don’t worry too much about the MPRE. With the review course, you should be plenty ready, and you have tons of time to take a practice test between now and the MPRE. Last year, I didn’t get a chance to study until the Thursday before, and it all turned out fine!
Ah thanks! I’m a little nervous since a friend of mine failed it last year! That makes me feel better!
I’ve never been to a Bucks game (I’m from Milwaukee ;)) or even ever watched one on TV. That’s how big of a pro-basketball fan I am! But from what I hear, they are kind of an embarrassment of a team. Hopefully they didn’t give Milwaukee too bad of a wrap last night when the Bulls killed them!
They were pretty close in the beginning, the bucks were winning for a bit!
I’m more of a football kind of girl but I’ve never been to a professional basketball game, I think I could get into it! And you must be a genius… that recipe sounds awesome!
Haha I’m definitely a football girl too, it was fun to try out a basketball game though!
Oooh the microwave pumpkin pie sounds tasty! I’ve been doing a protein pumpkin thin gee with almond butter & cocoa lately. SO good!
That does sound good! I’ve been out of almond butter for a week because trader joes hasn’t had it in stock!!
How fun about that game! I would totally love to go to something like that, although I know next to nothing about basketball lol. The environment of professional sports games are awesome though
Ummm heck yes to this pumpkin recipe, I WILL Be making this, tomorrow morning perhaps for breakfast!
I agree, it’s all about the exciting environment! Otherwise everyone would just watch on TV!
I’ve never really been a basketball fan… but going to live sports games is fun! I love getting swept up in the excitement, even though I usually have no idea what is going on haha.
Also this recipe looks awesome and I’m so happy to see that I have all the ingredients. I’m definitely trying this soon! 😀
I agree, I love the crowds and the excitement!!
Definitely! Michael Jordan was such a huge part of our childhood, I’ll probably never be able to think of the Bulls without thinking of him!
Me neither, Natalie!
Love the looks of that pumpkin pie recipe! It looks so filling, and microwave-capability is always a plus for me 🙂
I remember the Michael Jordan hype, especially from his movie stint with Looney Tunes… LOVED it!
Oh, and I just nominated you for the Sunshine Award on my blog. I didn’t see it on Peace Love and Oats anywhere, so i hope it’s not a repeat offender 😀
Thanks for the nomination!
That’s awesome! I’ve been on a mug brownie kick recently, so this is quite a nice addition. I’ll be going for the gooey texture.
Not much of a sports person. I avoid being outside of my apartment during games (I live near Wrigley).
