So yesterday marked day four of Molly-sitting! We started off the day with a nice walk around the park. She was adorable, and of course made several friends. I try and take her on one of these longer walks once in the morning and once in the evening.
I love the park because it barely feels like you are in the city. Haha until you hear the bus behind you “151 Michigan to Belmont”…
My brother had mentioned he tried to get Molly to jump over this small yellow fence but she wouldn’t. I decided to attempt it to… no luck. She was not having it. She’ll leap over furniture but this fence was just too scary!
Yesterday I also got a chance to go home, trade out clothes, get some school work done and go to the gym. I hadn’t been home since Saturday morning so it was nice to re-collect myself.
For meals during the week I made Elise’s Crockpot Lentils. I only had 2 cups of lentils instead of 3 so I only used 1 cup of water and 1 cup of soup. but mine still turned out pretty soupy. Delicious, haha, but soupy. I’m leaving it in the pot overnight hoping it will thicken up a little bit.
For lunch I made the most simple yet AMAZING meal. I made a sweet potato in the microwave (stab it a few times with a knife, wrap in saran wrap, and microwave for 4:30) and then I had some cooked chicken that I poured 1/2 T of coconut oil on and reheated in the microwave, topped it with some avocado, shredded cheese and salsa.
The coconut oil really made this amazing! I know everyone always says that coconut oil really makes a difference, but I’m finally a believer! So good.
And yes, it looks like a mess in the photo. But so good.
I also remember reading on Ashley’s post a while back that you can use coconut oil for so many things, including using it as conditioner in your hair! I’ve been meaning to try that, I need to! Haha although I might smell like coconut oil all day!

where do you get your coconut oil at? the onle place I’ve seen it is at tj maxx and it’s like 10 bucks..
Not that you asked me, but Trader Joe’s sells it for $5.99 for like a 12 oz. jar (possibly larger? I can’t remember the exact size). Jewel also carries it, but they sell it for $7.99 for a smaller jar.

I haven’t used coconut oil yet, but I definitely want to. Pulled pork is my favorite crock pot meal, but want the easiest crock pot meal known to man? Add chicken breasts and a jar of salsa, and a can of black beans. Cook on low all day. Add shredded cheese right before you eat and let it melt a bit. So easy and so good! You can top with lettuce, greek yogurt, etc when the chicken comes out.
Oooo that sounds delicious! I’ve done just plain chicken breast but I love the idea of adding the salsa and black beans to give it flavor!

I make a ton of soups and chilis in the CrockPot during the cooler months. Split pea soup is one of my favorites! I use the recipe on Kath’s blog.

I love coconut oil and even use it as a moisturiser! I like doing my fried and scrambled eggs in it and roast squash tastes amazing when done with coconut oil 🙂
I’ve heard about using it as a face moisturizer at night, but doesn’t it get your pillow dirty??

I bought coconut oil for the specific purpose of making Jessica’s Caramelized Pineapple Quesadillas from How Sweet Eats, and it was definitely a solid life choice. I haven’t used it since, but I like your idea of putting it on chicken! That sounds incredible!

The first recipe I ever used coconut oil in was this Buffalo Chicken Chopped Salad. Very, VERY yummy.
I haven’t bought or used coconut oil yet and I seriously have NO idea why. Needs to happen, ASAP. That sweet potato creation looks delicious. I wasn’t feeling sweet potatoes during the summer months but I’m back on them now!
I love using coconut oil on my sweet potatoes! But other than that, I usually only use it for sweet recipes like raw chocolate chip cookies. I need to branch out more and try cooking more things with it!

I have yet to try coconut oil! I also have never experimented much with a crockpot. My mom would often use one to make dinners at home but I never bought one for living on my own. I’d like to consider trying one out though because of their supposed time saving ability!

oh, the joys of coconut oil! I’ve used it in place of butter in lots of baking recipes (cookies, pie crust, etc.); I love to use it as a saute oil for dishes such as thai stir frys and the like. And for making pancakes.
crockpot cooking – my very good friend in cold weather months (I live in a hot climate). One of our favorites is baked beans – easy peasy – two cans of white small beans (we use northern), small can of tomato sauce, about a TBSP of grainy mustard, about a quarter cup each of brown sugar and molasses, about 2 TBPS maple syrup (it’s a lot of sugars, I know… could cut back/cut out to taste but it’s SO good and we skip dessert w/ this meal:P), about a third cup natural BBQ sauce (Annies is my go-to), a clove of garlic minced, a big onion chopped, about a tsp each of thyme and oregano. We add a few slices of bacon, chopped but could skip that for a veg meal. Stir up well in the crockpot, cook 8.5-9 hours on low. So, so good with steamed spinach and some warm cornbread… This makes enough for two of us for dinner and lunch the next day, fyi.

I sometimes put coconut oil in my hair and it makes it silky smooth! All I do it grease up my hair, wrap it in an old T-shirt, put a plastic bag over it, and go to sleep. The next morning may require a couple of shampoo sessions but it’s oh so worth it!
