I hope you’re all having a good Thursday! Not much to report here after a long day of classes, so let’s just get right into this week’s Thursday Thoughts!
1. Remember how I said I’m on Team Pretty Muddy? Well I’ve finally registered for their race in Chicago this coming September!! I’m so excited to be participating and hope that any fellow Chicagoans join me and my fellow bloggers! And for those of you not in Chicago, they have race locations in seven different states!
2. So, a long time ago I went to a Grub With Us dinner with Chelsey at Karyn’s On Green, and there was a dish with these amazing mushrooms, but I never knew the name. I was trying to describe them to Kelsey this weekend and then the next day I found them in Whole Foods! I forgot to email this picture to her, so I thought, hey, let’s just share it with everyone!
3. Speaking of Chelsey, how cute is she? She’s only 14 weeks (well 14.5 now) along and already has the cutest pregnancy belly with her TWINS! Some of you might also follow my other no longer preggers blogger friend, Ashley – be sure to send her, Cody, and their beautiful boy Hunter some prayers that he gets better and they can take him home ASAP!!!
4. I wanted to say, one more time, how much I loved your comments on Monday’s post. Seriously, you all rock. My favorite comments? The ones from people who don’t normally comment. Thank you for being brave enough to open up! (Or to remind me of our awesome séance in college…).
5. One note on the Intuitive Eating Challenge, I think the hardest part of this for me is my food intolerances/IBS. Lesson #1 was eat whatever you want. The point is to take away the “food rules” and stop telling yourself that some foods are “bad” while others are “good.” Unfortunately, eating whatever I wanted resulted in some “stomach distress” this week. It was unpleasant to say the least. Hopefully I’ll figure out balancing eating what I want with eating what my system can handle.
6. Um, WHO AM I? Apparently I’m a huge pro soccer fan?? On Saturday I watched THE ENTIRE Sporting KC vs. Montreal Impact game on MLS Soccer Live Streaming (Sporting KC won 2-1 for Montreal’s non-win of the season!). Don’t get me wrong, I’ll watch sports, but if I’m at some kind of party or bar or a live game. I’ve NEVER sat still and watched it by myself. Guys, I think I found my sport. This is weird.
7. SO excited to see some of my friends tonight for TACO NIGHT. By the way, do you ever compare your group of friends to the characters on Sex and the City? Kelsey wrote a funny and interesting post about it yesterday, (and shared our “labels”…).
8. Molly wanted to say hi. She missed you all.

um chelsea (the soccer team haha) is coming to st louis… my hubs is going with his dad and they are seriously SO EXCITING! i know itz like a once in a lifetime chance and i loved playing soccer growing up but i def don’t follow it or watch it anymore!
I played from kindergarten through 5th grade… career ended quickly.
I’ve been following your blog for quite a long time now and always look forward to your posts, but have never really replied to anything – so I thought I’d just say hey from the UK! I always find your posts inspiring and Molly is just the cutest, I want to hug her!

I have actually done a mud run with my mom! The actual mud was freezing so we were happy that it was a warmer day but it made us get through the obstacle course faster 🙂

Haha well they’re pretty good! Although I prefer them cooked, I’m not a huge fan of raw mushrooms, like in salads.
Katie – I’ve been following your blog for awhile now too and look forward to your daily posts! I grew up on a farm and have lived in a rural community in eastern Iowa my entire life – I never knew – until this morning – that you could buy morel mushrooms in a grocery store! Like Katy – I used to go mushroom hunting with my dad growing up! One spring my dad found so many, my mom made my dad morels (breaded and fried) every night for month! Definitely a favorite spring time treat!

You seem to be of the adventurous sort, so I think you’d really like hunting for them! You get to roam around the timber – with your eyes on the ground, looking around dead trees and other inconspicious places. I was never the best at it – I’d be standing on top of one and my dad would have to point it out to me! They blend into their surroundings very well – It could be like a camo version of I Spy 🙂

I don’t think I’ve ever eaten those mushrooms! And I adore mushrooms. My favorite are the trumpet ones. What do morels taste like?!

I want to say I first heard about morel mushrooms in Michael Pollan’s books, Omnivore’s Dilemma?? Never tried them though!
They have the coolest texture!
Um soccer is the BEST sport to watch – especially live! Soccer fans are a whole other breed. They’re raucous, fun and even clever! I got to go to the Sporting-Montreal game. It was a blast! Afterwards I got hang out with the players too 🙂

Haha.. I really don’t like watching soccer. I just don’t understand and I’m a little skeptical of stoppage time. Morel mushrooms are awesome!
Hahaha I just have faith in the refs when it comes to stoppage time, they know what they’re doing.
Yes–having stomach issues & intolerances would DEF make it harder to just ‘eat whatever’! Let me know if you need any tips.

I love morels! I once went on a mushroom hunt (long story) and found a bunch in the wild, and got to cook them up! So good.
I feel your pain (literally) with the stomach issues. I HAVE to be particular about what foods I eat and can’t just eat whatever I want because my stomach will freak out. Like, it’s hurting right now after I just chewed some gum. Ridiculous.
Oh yea I stopped chewing gum years ago, can’t even have one piece!

Awww . . . Molly is too cute. My friends and I are considering doing the Dirty Girl Mud Run that’s at the end of June. We did it last year, and had a blast. 🙂

I did the Pretty Muddy race last year in Ohio. It wasn’t my favorite race (the course was mapped out poorly, I thought), but I did like the Dirty Girl run in Indy!
That’s too bad about the Ohio race, hopefully it will be better here in Chicago!
I did a Tough Mudder a few months ago. It was a blast!
I’ve always been a bit weird with mushrooms (fungus? Really?) but I like the dried shitaki you get in the ethnic foods aisle.

The Pretty Muddy race sounds like such fun; wish I could join in! Mushrooms are one of my faves, which is funny because as a kid I didn’t like them at all! In my opinion, the best types are portobellos…marinated…BBQd…and served on ciabatta with other yummy burger toppings 🙂
