Okay, okay, so it doesn’t really look like a pancake… But that’s more due to my poor flipping skills.
For this week’s What I Ate Wednesday I’m going to share with you a recipe that I came up with last week when I was trying to just use up what was in my fridge, but now I’ve made several times because I liked it so much!
If you’re new to What I Ate Wednesday, head on over to Peas and Crayons to see what it’s all about and the other bloggers who are participating.
Remember that big batch of quinoa I made for meal prep last week? Well I hadn’t really used much of it, so I needed to start using it up, along with a bunch of eggs that I bought but didn’t use the way I’d intended.
I decided making a pancake with the quinoa and eggs could turn out well, and I added in some chopped up bell pepper to use it up before I left for the weekend.
I started by sautéing the peppers in a pan with olive oil:
While that was cooking, I mixed together 1/2 cup of quinoa, two eggs and then added about a tsp of paprika, as well as some ground pepper.
I put all the peppers in the center and the poured the egg and quinoa mixture over the top, allowing it to cook for a while (about 3-5 minutes)
Then… well. Then I tried to flip the pancake but that didn’t turn out so well. I let it cook on the other side for a little less than a minute and then plated it, topping the pancake with a bit of sriracha.
Ta da! Sounds a little weird, but I really love the texture and the peppers add some veggies into the meal. You could even use any other kind of vegetable – I think chopped asparagus or broccoli would be great too.
Veggie Quinoa Pancake
Serves: 1 Cook Time: 15 min
Ingredients:
1 bell pepper (chopped)
1 tsp olive oil
1/2 cup quinoa
2 eggs
1 tsp paprika
salt and pepper to taste
Directions:
Put olive oil in pan and sautee chopped pepper until soft. Mix eggs, quinoa, paprika, salt and pepper in a separate bowl. Once peppers are cooked, pour egg mixture over peppers into the pan (be sure pan isn’t too hot or eggs will burn before cooked all the way through). Once pancake is formed and eggs are mostly cooked, attempt to flip…
Optional: After pouring into pan and cooking for a couple minutes, place pancake in oven at 350 for 5-10 minutes to bake (similar to a frittata).
I’ve eaten this for breakfast and dinner – so easy and quick to make! Oh and I should have mentioned this at the beginning of the post, but I’ll be recapping my time in AZ and the race tomorrow or Friday! Can’t decide if it would be weird to just skip Thursday Thoughts? Can’t remember the last time I didn’t do it!
What’s the weirdest meal you’ve ever come up with?
What veggies would you put in the “pancake?”
This looks delicious! My flipping skills are not so good either, but as long as it tastes good, right!
Exactly – taste is the most important!
looks yum! I’m a terrible flipper as well
Thanks, Lindsay! And yes, need to work on my flipping skills… haha
it looks more like a scramble (which is how my “pancakes” turn out most of the time anyway haha) but regardless of itz name, it looks great!
Haha definitely closer to a scramble!
Great use for leftover quinoa! And this looks much more exciting than just quinoa topped with eggs and veggies for breakfast. Good idea for changing it up 🙂
I have no idea how I came up with it, but I’m glad I did!
Oh yum! That looks great! I’ve made quinoa muffins with similar ingredients. I throw in some black beans and cilantro to to make them southwestern-y and top them with avocado!
Ah yes I love quinoa muffins! I made some pizza ones once, but I love your southwest idea!
I don’t eat savory breakfasts all that much, but I add greens to my egg burritos.
ooo yum! Gotta love burritos!
Wow that looks soo good! Don’t worry I wouldn’t be able to flip that either 🙂
haha it was just too big!
That looks SO good! I love finding new uses for quinoa and I LOVE breakfast that incorporate lots of veggies!
Me too, gotta get those veggies in!
Whoa that does sound mighty good! I love a bit of savory in my b-fasts!
Often my pancakes look like that….. hah
Haha yes, this is what most of my pancakes look like!
No so weird, I think it looks great! We make veggie pancakes for dinner quite often actually! Love them topped with hummus and salsa! yum.
The weirdest food by reaction would be my peanut butter deviled eggs. Take out the yolk and add a big spoonful of nut butter. Delicious, this was my go to snack when I was training for figure.
Haha yes that sounds pretty weird but I’ll take your word for it!
This looks uniquely delicious!!! I love the idea. I’d be all about spinach, bell peppers, & tomatoes.
Ooo yum! Good veggie ideas!
Not just trying to be nice here but your ‘flipping mistake’ actually makes the meal look a lot more interesting than plain old pancakes would have. Granted, this is coming from a failed blogger who can’t get behind the pancake magic but still.
HAha well I’m glad you think it looks good!
I love this!!! Delicious girl!
Thanks, Brittany!
For some reason, savory pancakes have never been my thang, but your recipe looks INCREDIBLE (it may sway me to try it out :D). Thanks for the idea!
Thanks Serena!
Sometimes I get ‘flipping’ excited. I learned to wait a little longer before flipping so that I don’t break my pancake apart. Your dish looks lovely.
Haha I tried waiting! I think it’s just too big…
