Good morning and happy Wednesday! For this week’s WIAW post, I chose my food from Monday, a typical day of job searching!

I started out my day by headed to the gym bright and early for a 3 mile run and a 12 minute HIIT workout from Purely Twins. When I got home I showered, got dressed and made some breakfast. For breakfast I made a bowl of Blueberry Muffin Oatmeal, however I nixed the chia seeds and added 1 T psyllium husk (I’m going to add less from now on… super weird texture), 1 tsp maca powder and 1 tsp spirulina, which is what gives this the bizzare green color. Topped with almond butter!
After breakfast I took care of a few “desk” items at home and then headed out to Starbucks where I met up with a friend of mine from Law School to do our job searching. I love seeing her every once in a while because we’re both in same boat and it’s nice to commiserate!
While I was at Starbucks waiting for my friend, a barista came around handing out samples of their Gingerbread Latte. I assume they do this to get you to try a drink you wouldn’t otherwise order. Well, it worked. This thing was AMAZING and was even topped with molasses!
I almost started laughing when the barista came around again, this time with a peppermint mocha sample. I was sitting at a big table which happened to have 3 other women around my age sitting at it, and we all grinned and accepted our samples. Definitely made my morning.
After being at Starbucks for a couple hours I broke out a Quest Bar for a snack since it was really lunchtime for me.
After another couple hours I headed home for lunch. I made a “quesadilla” aka folded over burrito with avocado, refried beans and a Laughing Cow Cheese Wedge. With a side of roasted green beans, carrots and parsnips that I had prepped this weekend and served with some sriracha.
My lunch didn’t quite fill me up, so I also had an apple while continuing my job searching work.
Since the weather was horrendous (gradually working its way down to 32 degrees, windy and snowing/sleeting) I opted to stay home to do a little cleaning and job searching instead of going back out to another coffee shop.
After a while I was getting hungry again and it was time for dinner! I had a filet of baked tilapia topped with olive oil and lemon pepper (from Target’s frozen food), spinach sautéed in olive oil and baked spaghetti squash with a Laughing Cow Cheese Wedge mixed in.
For dessert I made a big bowl of “protein ice cream” which included about a cup of frozen peaches, half a frozen banana, ice cubes, a pinch of xantham gum and guar gum, stevia and vanilla, all mixed in my Vitamix. I topped it with cocoa powder mixed with protein powder (more on the side – just did this topping for the picture!).
Before bed I also had a couple spoonfuls of PB! They were out of almond butter (AGAIN) at my Trader Joe’s so I grabbed a jar of PB when I was at Whole Foods on Sunday. I’m too cheap to buy Almond Butter anywhere else. Guess I need to make my own batch again!
Which do you prefer – Peanut Butter or Almond Butter?

i prefer peanut butter definitely..unless its justin’s vanilla or maple almond butter..that stuff is GOOD. Good luck with the job search!
Haha those are good, probably because of the sugar added… but still SO GOOD.
I also only buy almond butter at TJ’s so I had to get PB this week!!! I go through phases with nut/seed butters… sometimes peanut, sometimes almond, sometimes sunflower! I can’t get enough.
I’m definitely a big almond butter fan, but I’ll try anything when I can get my almond butter at TJs!
I think I prefer peanut butter…but I’m fine with Barney Butter or any of the Justin’s flavoured varieties if I’m going with almond!

I’ve always wanted to try the gingerbread latte at SB but I’m too nervous to spend $5 to not like it! I’d love to try a sample sometime.
My favorite espresso drink is currently a peppermint mocha (or just plain mocha too) with almond milk. So yummy!
I think I would like almond butter better if it were cheaper. I only buy it when I go home to my parents house where they have a TJs.
I wish they had samples more often, this is probably the second time in several years that I’ve been offered a drink sample!

The green of your oatmeal actually reminds me of making blueberry muffins and sometimes the berries would burst and make the batter a bluish sort of green 🙂
Job searching… Fun stuff! I’m looking for an internship right now and it can get pretty stressful. Good idea breaking up your day with trips to Starbucks!

Are Quest Bars good? I’ve never tried them before but I’ve heard lots of people talk about them. And the white chocolate raspberry sounds good.
I really really like them, but I know some people don’t like the texture.
What a delicious day of eats! I love the ho-ho mint mocha from Caribou Coffee this time of year, especially with white chocolate! Hope you are still doing well in your job search; best of luck to you!
