Hey everyone! I hope you’re all enjoying your 4 day week!!! For today’s WIAW, I wanted to show you a typical day of bar prep for me! Today’s WIAW comes from yesterday! I woke up around 4:50am, had some coffee and half a banana, put up my blog post and then headed off to the gym! Since Boot Camp ended last week I decided I wanted to focus more on strength and weights, so I’m following just the workout plan from Jamie Eason’s Livefit Trainer (NOT the meal plan) to get in some weights. Yesterday was chest & triceps, and I did 10 minutes of elliptical at the beginning and threw in 10 more at the end since I finished early.
After the gym I headed home, showered, got dressed, packed up and had a few extra minutes so I decided to eat my overnight oats at home and then head off to school. They included 1/3 cup oatmeal, 1 T chia seeds, 2/3 cup almond milk, cinnamon, stevia, vanilla, 1/2 T psyllium husk, blueberries and almond butter.
After breakfast I caught the bus downtown and headed to class. I got some iced coffee and a couple hours in I had a cinnamon roll Quest Bar. SO good.
We finished class early (about 11:45), so I headed to a room to study with a couple other girls and after a while I was ready for lunch! I heated up the lunch I brought, which included chicken sausage, quinoa, and roasted carrots, squash and brussel sprouts. I’m a fan!
A couple hours of studying later I ran back over to Starbucks and grabbed a coffee and a Kind Bar.
Aaaaand a couple hours after that (just after 4) I had to head back up to Lincoln Park for a hair cut. After I took the train back up there I snacked on a banana while I was walking to my appointment. I was getting hungry and knew it would take an hour and a half (I get my hair cut at a school, so it’s way cheaper but it takes longer) and didn’t want to get hangry!
When I got home I was feeling breakfast for dinner, so I microwaved a sweet potato and topped it with an egg, some egg whites, avocado, ketchup and had some sauerkraut on the side (don’t judge).
Later on in the evening I decided to pull out an old favorite and made some peach “ice cream.” Into the Vitamix went some frozen peaches, stevia, vanilla, xantham gum and almond milk.
Um, I forgot how GOOD this is! Seriously! Topped with chocolate sauce (cocoa powder and stevia mixed with water) and almond butter on the side! I most definitely had two bowls.

Looks like a great day of eats! I’m so jealous that its a four day week for you! We do NOT have enough public holidays in Australia! I can’t even begin to fathom how you get up that early! I would consider myself an early riser, but anything before 7am and I can’t cope!
I like breakfast for dinner, but it usually leaves me feeling a little unsatisfied. But I’m a big fan of breakfast for lunch!
Haha you get used to it. Plus the sun comes straight into my apartment and right now it’s rising at about 5:15 anyway, so I’m up even if I don’t want to be!
I am amazed at how healthy you are! I always forget to add my chia seeds to oatmeal, shakes, etc. and I really need to get into a better habit. Now that I am finished with school for the summer, I am hoping to do more at-home cooking. Thanks for some ideas!
Haha I don’t think I’m THAT healthy! I just buy “healthy” groceries and it makes it a lot easier!

I make that sauce a lot, so easy! Haha I go through cocoa powder like crazy though!

I love all of your meals! I tried frie egg on sweet potato a long time ago after seeing it on your blog, such a great combination! I’m also really jealous of your quest bar.

oh those egg whites, i’m all about lathering them in avo and ketchup! haha, we think alike. good luck with the prep! you are so smart!
Ahh I tried! It was easier to prep for a 3.5 day week!
I finally got around to trying overnight oats and I liked them, but the kind I made (with peanut butter) were really high in calories. So I haven’t made them again.
well it’s good to have a bigger breakfast!
That’s a really interesting mix with the sweet potato. I think the one food that I discover the most dishes for through WIAW has to be the sweet potato…it’s so versatile and so easy!
That peach “ice cream” sounds and looks absolutely fabulous, by the way!

LOVE Overnight Oats and LOVE “brinner” (breakfast for dinner). So jealous of your VitaMix–my blender just doesn’t do the fruit ice cream. Maybe someday…
Yea, normal blenders just don’t do the same thing, more smoothie-like!

Your lunch looks deeeeelicious! there is just something about roasted veggies that cannot be beat. YUM. Totally a bfast for dinner fan over here, when I still ate at the dining halls and they would feature breakfast for dinner, there was a chorus of “yesssssss”‘s all over campus.
I totally agree – roasted vegetables are just the best!
It’s been ages since I’ve had overnight oats! Now that we’re getting back into warmer weather (and I like having a quick option when I’ve got to get to work) I think I’ll be making it more often…I like using yogurt instead of almond milk though.
And Livefit has some great workouts in it – I finished it, but phases 2 and 3 get really intense!
Haha we’ll see how long I keep up with Livefit, but I’m liking it this week!
Your snack is totally calling my name. There is nothing better than an iced coffee mid-morning, in my opinion! Here’s a kind of random question for you: if you get up at 4:50 to exercise, when do you go to sleep? I’m going to have to change around my schedule in the fall, and it looks like that will be my wake-up hour, too. Yikes!
I go to bed at 9pm! I usually try to be IN bed just before then, and lights out, phone down at 9.
All great eats to fuel up for the bar! Hope all is going well – cinnamon roll quest is on my list of favorites. Nothing holds a candle to cookie dough, though!

I love overnight oats, better than hot oats actually. Put them in a nearly-gone nut butter jar and they’re even better 🙂
Haha I try to use a nearly done jar of nut butter but I can never save it long enough! Haha aka I can’t save it more than an hour…

I love overnight oats but after switching to a mainly paleo way of eating I don’t get them all too often anymore. I do splurge and have some good gluten-free ones from time to time though. So good! You do so much running around and eat so healthy! Way to go!
I actually tend to eat healthier when I’m busier!

I LOVE breakfast for dinner! I haven’t tried a sweet potato topped with an egg (I usually use almond or peanut butter) but it looks delicious!
I’ve tried almond butter but I think I just prefer savory sweet potatoes!

I’ve always loved breakfast for dinner! Breakfast is my favorite meal of the day, so I could eat it at any time!

I’m a HUGE fan of both overnight oats and breakfast for dinner. I could eat overnight oats, especially when made in an almost-empty nut butter jar, at any time of the day. Pancakes and peanut butter banana sandwiches are always winners too! 🙂
