Happy Wednesday! So today is the very first Wednesday in a long time that I totally forgot about What I ate Wednesday! Yesterday I went on a 4 mile run and then to Jazzercise with my mom, so I didn’t actually end up eating breakfast until 11:30, so I never really had lunch! So for today’s WIAW, I’ll be giving you the recipes for my breakfast and dinner from yesterday!

When I went to buy my protein powder here in Kansas City, they only had chocolate! So I bought that and now I have a new recipe: Chocolate Pumpkin Protein Oats!
Chocolate Pumpkin Protein Oats
Ingredients
1/3 C Oats
1/3 C water
1/3 C almond milk
1 scoop Sunwarrior Chocolate Protein Powder
1/3 cup pumpkin
cinnamon to taste
dried cranberries and peanut butter to top!
Directions
Combine oats, water and almond milk in sauce pan and bring to a low boil/simmer. Mix in pumpkin and cinnamon and cook for a bit. Add 1 scoop protein powder (may need to add more water to keep it from getting too thick. Cook until it reaches the consistency you like (it will thicken up a bit after you pour it into a bowl). Serve and top with PB and cranberries!
For dinner, my mom was going to make her normal spaghetti, but with gluten free pasta. However, we realized the sauce mix she uses has soy in it, so I offered to make a new sauce!
My mom was in charge of cooking the pasta (we found a brown rice pasta) and cooking the ground turkey.
I sautéed some chopped zucchini, yellow squash, and mushrooms and 4 chopped cloves of garlic and 2 teaspoons of olive oil.
I then combined 1/2 can tomato paste with 1 can of whole, peeled tomatoes in the food processor, and then poured it over the top of the veggies once they’d cooked down a bit.
After that, I added about 1/4 cup chopped parsley, 1 tsp salt, 1 tsp black pepper, and 1 and 1/2 tsp ground oregano. We then added the ground turkey into the sauce and let it simmer for about 15 minutes.
Serve the sauce over your pasta of choice and top with parmesan cheese!
Do you like my mother’s bowl? She told me to make sure I got the bowl in the picture. She has a set of these that are different colors with different types of pasta written on them. She quite likes them.
Everyone loved the sauce and liked it better than what my mom used to make! Personally, I think it was all the added veggies. We are big fans of mushrooms over here.

What do you think about having chocolate for breakfast? It’s a bit too much for my tastes, I think I’ll stick to vanilla protein powder…
Chocolate is ok in my book – to be eaten anytime, anywhere, for any reason (within reason, of course). My mother also had Celiac so I haven’t had to revamp any of her recipes. We ate GF at home for years.

both meals look delicious!! i love to “healthify” some of my parents’ traditional meals they made for us growing up. they still taste just as good but much healthier!
i’m all about chocolate for breakfast! in moderation, of course. i enjoy a little cocoa powder in my oatmeal or smoothie or a few chocolate chips in my oatmeal bowl every so often.
I’ve seen you healthify some recipes! I should take a look at those!
I quite like chocolate for breakfast on occasion but after a while it gets too much! I always seem to go through my vanilla powders quicker!

My protein powder is vanilla and my boyfriends is chocolate and I’ve definitely come to the decision vanilla tastes better in everything… protein bars, shakes, oatmeal. I need him to switch over so I stop going through mine so fast!

I do loveee chocolate … but I agree, I prefer it later in the day! I tend to buy vanilla protein powder for that very reason

Chocolate for breakfast is a-okay in my book!
I can eat chocolate any time of day! However I usually prefer a savory breakfast followed by something sweet. 🙂
I’m usually lazy and buy canned sauce, but homemade is definitely best! I love your veggie-packed version, especially because it includes lots of mushrooms. I’m a huge fan too!

How about a compromise — I like peanut butter cup protein powder which is peanut butter flavoured with like 50 chocolate chips in the entire tub. I’d say you get .29 chocolate chips per scoop. 😉
I’ve never heard of peanut butter cup protein! The kind I have to use comes only in vanilla, chocolate and “plain” whatever that means…

I use Trader Joe’s gluten free oats. I’ve used Quaker and those seem to be fine, just don’t use single packaged kinds!
