WIAW–Breakfast Style

As I mentioned last week, I love participating in What I Ate Wednesday and don’t plan on stopping. However, I felt like mixing things up a bit this week. I used to eat the same thing for breakfast every single day, at first it was oatmeal and yogurt for about a year, then a smoothie for several months, then just oatmeal (usually apple pie oats) for almost a year, then it was sweet potatoes with over easy eggs.

Now? I’ve finally broken out of my breakfast rut! I rarely eat the same thing two days in a row, I make whatever I’m craving that morning, whether it’s something savory, sweet oats, or basically whatever I have in my refrigerator that day.

So for today’s What I Ate Wednesday, I’ll be showing you some of the breakfasts I’ve been eating over the past week or two! If you’re new to WIAW, head over to Peas and Crayons to see what it’s all about!

Peas and Crayons

Gina’s Breakfast Cookie Dough Cereal. Except for mine, I actually cooked the oats first and added a tsp of cocoa powder (along with 1 scoop sunwarrior protein) then topped with almond milk and 1/2 banana.

1 over easy egg + 2 egg whites, sautéed greens and shitake mushrooms, plus Udi’s bread with avocado (mashed with salt & pepper).

Apple Cinnamon Amaranth

Classic banana oatmeal, made with 1/2 banana, 1 scoop sunwarrior protein and 1 glob of peanut butter on top!

Has anyone tried this new blueberry oatmeal from Starbucks? I love it! The toppings are Agave syrup, blueberries, and a mix of dried nuts, seeds and fruit. Definitely a nice change up from their classic and the nutrition stats on the toppings are a bit better too.

And finally, yesterday I tried Whipped Plantain Coconut Yogurt from Carrots N Cake. It tasted pretty good, but not sure I’ll make it again. I used coconut extract since I didn’t have any coconut.

    Ive wondered about the oats from starbucks but am too…cheap to try and risk the child snubbing and my throwing my money and the FOOD away.

  2. I tend to go back and forth between about 3-4 breakfasts…enough variety to keep it interesting, but not enough that it’s probably a bit of a rut. I am going to do some pancake experimenting for breakfast today though!

    And cannot go wrong with classic banana oats. So good.

  3. I’ve been rotating between oatmeal and toast with almond butter, coconut oil, cinnamon and chia. Those are my go-tos. I always go sweet for breakfast! Your pictures make me want to go out and buy some avocado now, though…

  4. i go through HUGE ruts and they’re mostly directly influenced by whatever breakfasts you’ve been having lately. does that mean i’ll have to start shaking things up? the only thing i’m bad at (that you are a champ at) is getting veggies into my breakfast. i can do it sometimes in omelets but i so rarely crave veggies anyway and breakfast rolls around much too early for my tastebuds to be ready for the green stuff.

    • Hahahaha I’m a bad influence! I loved that we were both in that sweet potato and egg rut together! And weirdly, sometimes I just crave something green at breakfast… can’t explain it.

  5. Mmmm I LOVE talking breakfast! It’s my favorite meal of the day after all. 🙂 I used to eat the same thing over and over until I got burned out on it and moved onto a new thing, but I’ve been better about switching it up the last several months. I usually rotate it among about five different breakfasts. I’ve actually been wanting to try Gina’s cookie dough cereal, so I’m glad to hear it’s so good!

  6. I always stick to the same breakfast but your switch up on breakfasts make me want to start exploring. that Amaranth recipe sounds really good. I love Starbucks New Oatmeal! SO tasty! Breakfast is my favorite meal of the day because it includes coffee haha 🙂 Have a great wednesday.

  7. Yum! About to eat breakfast & none of my options are that great this am! I am always torn between savory & sweet. I would say I lean toward the savory side though. Have you been to Ann Sather’s for brunch before? NOT healthy but so worth it!

    • Haha I don’t know how you have time for much in the mornings, especially those with any kind of double digit runs! Overnight oats are perfect for that.

  8. Oh yum all looks so tasty! Especially the big warming bowls of oatmeal; that new oatmeal from Starbucks sounds good – we don’t have it in the UK i don’t think.
    I’ve tried plantain…many years ago when I foolishly mistook one for a banana and attempted to eat it raw..thinking it was just a strange banana…stomach pains ow!

    • Haha they are a lot starchier than bananas and usually cooked. I waited until mine was suuuuuper ripe before making that dish.

  9. I switch between oatmeal and eggs + toast, with the occasional waffle and standard post-run Saturday pancakes thrown into the mix as well. I’m really starting to get bored with oatmeal, though. I need to find some ways to change things up with that, because though I love how it keeps me full, I’d like to have a little more variety in my breakfast routine.

    Plantains are great! I’ve made plantain chips before that I thought were pretty good, although I think a lot of people in the group I made them for were turned off by their banana appearance. More for me, though! Haha.

  10. Breakfasts usually change based on the time/mood and what’s in the fridge. I have tried plantains but was confused at the flavor. I was def looking for a banana flavor! Nope.

  11. Weekdays it’s pretty much yogurt with bananas (or berries). Some peanuts and raisins a few minutes later. On the weekends eggs with some meat. Maybe pancakes if I’m motivated!

  12. Mmm that avocado toast looks amazing! I try to change it up, but I usually end up eating the same thing for at least a few days (if not weeks) in a row. I love all breakfast foods, however, so I feel that it balances out in the end 😉

  13. Every morning I have the same thing for breakfast: coffee and peanuts. This usually tides me over till lunch, but the last several days it hasn’t been. Not in a hunger sort of way, but in a I feel strange and dizzy kind of way. I think something might be wrong with my blood sugar. I’m hypoglygemic and need protein for breakfast. Any ideas?

    • coffee and peanuts doesn’t sound like much of a breakfast! I’m not a nutritionist, so I’d see one about your hypoglycemia, but for protein I’m a huge fan of eggs, or you could make oatmeal and add either an egg (or egg whites) or protein powder. Also, having a larger breakfast will definitely help with your blood sugar levels throughout the day.

I love love love avocado seasoned with salt and pepper on toast, and when I was younger, I was such the ketchup queen; I’d eat ketchup on my scrambled eggs, just like you :), mac and cheese (not the box kind though- that was too runny for ketchup), rice, mashed potatoes, and more. I was sucked into the purple ketchup phenomenon, but I much prefer red; as the saying goes, we eat with our eyes… Re: the q’s, I can’t handle savory or hot breakfasts, and I pretty much each cereal everyday… Thanks for reminding me about my ketchup on eggs love!

  15. I used to stick to the same exact thing too (instant maple & brown sugar oatmeal with banana and berries cooked in the microwave), but over the years I’ve gotten into mixing it up. I even eat savory breakfast sometimes, which was basically unheard of until this winter. Whatever works!

  16. I go through phases of eating the same thing for breakfast for a few weeks and then suddenly get sick of it and change it up. Right now I am on a yogurt/cereal kick… nothing too complicated of course but it seems to be working just fine for now 🙂 Although I did switch it up with the oats in a jar the other day!
    SWEET forever, but I do enjoy savory at times, especially a breakfast involving eggs… yumm

  19. All of your breakfasts look super good. Fitnessista’s protein cookie dough cereal is amazing!! And nothing beats a good bowl of oatmeal.

    I’ve had bread at a Puerto Rican restaurant once made from plantains. It was pretty great. I think they just mashed some plantain and fried it into thin patties. The inside was shredded chicken. So. Good.

  21. Swoon! There’s lots of breakfast inspiration here; I’m especially intrigued by Gina’s Breakfast Cookie Dough Cereal. Sounds like a fun morning switch-up!

    I go through breakfast rut ruts–it seems like I get stuck eating the same one or two breakfasts for months, and then I’ll break the pattern and go through periods of eating something different every day. Right now I’m in a rut–I’ve had eggs, spinach and toast nearly every morning for the past two weeks. Boredom is beginning to set in, though, so I might be trying some of these ideas soon (I’m eyeing you, apple cinnamon amaranth). 🙂

  22. Ohh Breakfast is one of the hardest things for me to get creative with. Seems like we always eat the same things over and over again, eggs, bacon, toast, cereal, pancakes….

    I guess the hardest thing for me, is I dont’ want to cook 2 or 3 dif meals, so I usually make something the kids will eat, and I just hope they become less picky and will let me start testing new recipes, lol.

    I recently tried eating LESS gluten, and have been trying def foods. I really love GF bread so much that I almost prefer it to ref bread.

    All your meals look yummy, and I love avocado too 🙂
