WIAW–Class Free Monday

Goooooood morning! Today’s WIAW post comes from Monday – a day with no class! One of my teachers is out of the country so his class was cancelled Monday morning, meaning I had a nice, free morning. Sadly I wasn’t as productive as I’d hoped… but I did get some cleaning and some baking done! And a liiiiittle reading.

Spooky Snacks and Healthy Halloween Treats

I started off my morning pretty lazily, reading blogs, posting my own and doing a little reading. I also cleaned my kitchen and made banana protein muffins from Dashing Dish! I had one muffin while I was putting together my breakfast:

For breakfast I had 2 egg whites and 1 egg, roasted zucchini, eggplant and mushrooms, all topped with salsa. It was soooo good! My new favorite way to cook egg whites is just pour them in my small pan, let them cook and then flip them. It’s like an egg white pancake!

I also had a piece of dark chocolate. I am obsessed with dark chocolate right now.

After breakfast I did a little more hanging around and then I headed to the gym for 3 miles on the treadmill and an upper body strength workout. When I got back I refueled with a pumpkin smoothie!

Pumpkin Smoothie

Ingredients

  • 1/2 frozen banana
  • 1/2 cup frozen pumpkin puree
  • 1/2 cup flax milk (or milk of choice)
  • 1/4 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 1 scoop protein powder (I use Sunwarrior Vanilla)

Directions

Combine ingredients in blender and mix! Add more milk or water as necessary to get it moving.

I’m so glad I froze the pumpkin ahead of time, I think it added to the creaminess! I also topped it with a crumbled banana protein muffin.

I had lunch about an hour and a half later because I needed to head off to Girls on the Run practice so I kept it light. I had a can of Annie’s Pea Soup and a sliced apple with cinnamon.

I Loooooooved Annie’s Black Bean soup so I wanted to try some others. The pea was alright, but definitely not as flavorful as the blackbean.

After practice I headed to the Whole Foods right by the school I volunteer at. I grabbed a salad from the salad bar and a bit of trail mix. I had a ways to walk to get to the bus I needed so I snacked on trail mix while I was walking.

I hopped on the bus and headed up to the neighborhood where I was meeting people for Bingo! I was an hour early so I found a Starbucks to eat my dinner. At Starbucks I grabbed a green tea and hung out to eat my salad and work on my computer (okay, play Pottermore, I only had 30 minutes). My salad had peas, corn, sweet potato, beets, chicken, parmesan chees and balsamic vinaigrette. It was pretty good! I’m kind of obsessed with peas right now…

I met up with some of my Kappa Delta Alumnae friends at Hamburger Mary’s up in Andersonville. I’d never been to that neighborhood and it was fun to look around. It is a Swedish area of the city, I love that different areas have different nationalities. They do bingo night at Hamburger Mary’s (I went once in Kansas City!) and each time it’s to support a local charity. Tonight the Charity was CAWC – Chicago Abused Women Coalition.

We had a great time playing, and I even won a round! I literally screamed when she called B5 and everyone was laughing. I WON BINGO!!! Haha I absolutely love Bingo so this was horribly thrilling. I even had to take a lap around the restaurant while everyone threw their crumpled up losing cards at me. Loved it.

While we played I tried Crispin Cider (served in a glass on ice). I’ve tried a couple kinds, but this one wasn’t my favorite. I tasted a little watery compared to others and didn’t have much flavor.

Unfortunately, this was the last photo I managed to take before my phone battery died… I was just about to get a picture of our MC – Hamburger Mary for the evening! She (he?) was hilarious and had the best sequined dress and giant sequined bow. She also changed costumes halfway through the evening to perform a Pink song.

When I got home I was hungry so I made a quick snack – microwaved pumpkin pie with some PB2 and Chocolate PB2 (couldn’t decide…).

I didn’t measure anything but this seriously tasted like pumpkin pie, so I’ll be sure to re-create it and post a recipe soon.

  1. All your food looks amazing! Top tip: chuck that apple and cinnamon in a bowl with a plate on top for 3 minutes – goes all soft and sugary and gooey like apple pie filling!

  2. I’ve seen Annie’s soups at the store but I’ve never tried them because it’s so much cheaper to make a pot of soup on my own….I’m a cheap-o. Are the worth it?

    Cheer to chocolate at breakfast! I always crave sweets in the morning, and dark chocolate is such a better choice than a giant pastry!

    • lol I think I’m too lazy to make my own, I like the convenience. The black bean is definitely worth trying! And I was really craving that dark chocolate, perfect way to start the day!

  3. I love picking up snacks on the way to bus stops!! (Funny enough, my go-to lately is dark chocolate! Or candy corn …) And that pumpkin smoothie looks awesome! Going to be trying it this afternoon!!
    I love reading about your eats, Katie. Always one of my favourite WIAW posts. I think that we have a lot of the same tastes. And while you eat healthily, you’re relaxed and down-to-earth about it. It seems very natural. 🙂

  4. How nice that you had an extra day to your weekend! I used to Anne’s soups quite often when I was in college. I enjoyed that split pea one! I should get some of her soups again for an easy on the go meal for the winter months. My favorite salad toppings would have to be: candied pecans or almonds, berries, and goat cheese!

    • They are great for easy meals, even for school I’ll just dump the can into a microwavable container and bring it with me! Oooo and candied pecans sound so good right now!

  5. I love Bingo! I don’t know if a person can claim that they’re bad at Bingo since it’s generally all luck, but I am pretty lousy at it haha. Every year my extended family on my mom’s side gets together for a pre-Christmas Christmas party (usually some random Saturday in December), and the highlight of the party is always the annual Bingo game. Everyone who participates has to bring a $1 prize in a paper bag, and once you win a round of Bingo you can claim a prize. If you win more than once, you can swap the bag you have for someone else’s…it always gets very dramatic haha. But it’s so much fun! I love it.

    • Hahahaha I like that you’re bad at bingo, I think that some people are just naturally “talented” at it (aka lucky). And I love the prize idea! That sounds like a fun tradition!

  6. I haven’t played BINGO in years! How fun! DC bars are big on trivia nights, but I haven’t heard of any that offer BINGO. Maybe I can start a new trend. 😉

    Amy’s is a lifesaver during school. When I need something quick, I go for the tofu scramble, enchiladas, or brown rice bowl. I enjoy the black bean soup too (so good with chopped avocado, Greek yogurt and cheese).
