Can I get a wahoo for Wednesday?! Halfway through the week! I’m pretty excited about it, despite the fact that I have a make-up class today, which means I will be spending 170 minutes of my day in First Amendment Law… hmmm. But that’s okay, already working on my goals and using those positive affirmations!
Haha.
So seeing as it’s Wednesday, it’s time for another edition of What I Ate Wednesday! If you are new to WIAW, head on over to Peas and Crayons to see what it’s all about!
Soooo the sick thing? Well, Saturday night I suddenly got a really sore throat. I thought maybe it was from my run that morning, or from sleeping with the windows open the night before (allergies?), but when I woke up Sunday with a horrible sore throat. Obviously I went straight to the internet and diagnosed myself with mono or strep throat. Good thing my sister-in-law and Kelsey calmed me down (seeing as it’s about gone today…). Oh the internet…
Anyway, this week’s WIAW is from Sunday, the day I was attempting to combat my sore throat!
For breakfast that morning I was seriously craving some carbs and avocado, so I grabbed my last Rudi’s wrap and topped it with mashed avocado, two scrambled eggs and salt and pepper.
It was SO GOOD. Omg I want to eat it again right now.
After breakfast I did some school work and then headed to the gym and ran a few errands. Although my throat was hurting the rest of me felt fine, so I went ahead and did the strength workout from Tina’s Bootcamp. It wasn’t my best workout ever, but I felt better to get outside and move a bit. When I got home I was craving green, so I made a salad with some steamed kale, chopped and sautéed Trader Joe’s chicken sausage, avocado, and a “dressing” made from nutritional yeast, chickpea miso, almond milk and a little garlic and pepper.
A couple hours later I was hungry again so I decided to try out this Chobani flip! There was only one left in the grocery store that I went to with Kelsey and Em after our run and brunch and Kelsey said it was so delicious that she wanted me to have it so I could try it! That’s true friendship.
Verdict? It was A-MAZING! The coconut flavor alone was so good, but the almonds and chocolate bits that you added in took it to a whole new level. Seriously, this one was a winner.
After snack time I headed to Whole Foods with my sister-in-law where I got a few groceries and stocked up on some illness-fighting items. When I got home I immediately made myself an Emergen-C drink. I HATE flavored water, so I basically chugged this. Talk about “Sunday Funday”… Not.
I also had some sore throat and zinc lozenges throughout the afternoon/evening:

For dinner I re-heated the food I’d gotten at the Whole Foods hot bar. It included egg-white strata; kale with peas, garlic and sweet potatoes; mashed potatoes; and then some sort of amazing dish that I honestly don’t know what it included. There were carrots and figs, and then some sort of other delicious mashed orange food… maybe butternut squash? I don’t know, but it was to die for.
I finished off the evening with another Emergen-C drink and then some trial mix and “Easter candies” from Whole Foods. And there was way more trial mix than that… I just was too impatient to photograph it first.
Yum!
And in case you’re curious, I’m writing this on Tuesday and feeling a LOT better! Guess I don’t have mono… HA.

lol I diagnose myself all the time. When I was sick and had that horrible side pain, I diagnosed myself with appendicitis, gallstones, and a kidney infection. Ummm, yeah – I guess when you have the stomach flu your intestines just hate you. The pain is gone. 😉

That is a true friend to give up the coconut amazingness that is the cho flip! I tried it for the first time about a week ago and fell in love! Your breakfast burrito looks great, I have tried Udis bread but not their wraps yet.

I find that the Emergen-c packets work wonders when you get that first tickle in your throat of sickness. My roommate is studying to be a pharmacist so he’s always giving out over the counter cold meds all winter long. When I got sick he left me like 15 packets of the stuff on my dresser haha

I love Chobani flip! Since I ran out, I’ve been making my own choco/coco flavor using coconut pieces that I rip up, chocolate chips, and slivered almonds. Cheap ass.

This was my first time trying it out!
I know about internet diagnosis! I’ve diagnosed myself with pretty much everything from a broken bone to depression then talked to my mum/boyfriend/friends and realised I’m actually ok! The symptoms lists could apply to almost everything! Yummy, yummy looking eats :). I love whole foods salads!

Be thankful that you don’t have mono! I got it two years ago and it made me the sickest I have ever been in my life. Completely knocked me on my ass, and I still have some residual fatigue to this day from it! I’ve been very lucky health-wise over the years, but that was no fun.
I’ve always been so scared to get mono – I remember back in high school one girl was out of school for a month!

Whole Foods is my life! I have been contemplating if I want to go there for lunch and you may have just pushed me over the edge. My wallet hates you, but my taste buds LOVE YOU! lol

Whenever I get sick I always clear my schedule so I can sleep it off. Most of the time a couple good nights of sleep are just what I need.

Googling or WebMDing your symptoms is never a good idea! I am always afraid I have a type of cancer or rare disease when I do that 😉 I am glad to hear you’re feeling better – I’m sure your healthy eats helped you fight off the germs!

Ahhhhhhhhh I keep searching every grocery store i enter for chobani flips but have yet to find them 🙁 I’m desperate to try the one you did…I <3 coconut sooo much. I'm glad you're feeling better! Anytime I start feeling sick, I immediately up my oj intake and try to throw extras like spinach into my diet to boost my vitamins. I also try to get some extra rest and fluids.
Did you try target? I found mine at a store just here in Chicago that I was randomly in with friends.
I had mono when I was 18 and it was not fun. My best advice is just rest, get lots of sleep and plenty of fluids and just try and ride it out. It knocked me for six and took me quite a while to recover from it. Hope you feel better soon, I really feel for you and understand how rubbish it can make you feel. It just zaps you of your energy.

Do you massage your kale? A coworker of mine massages her kale when she eats it raw in a salad. Is that a thing?
Yes, it’s a thing but I just steam my kale (like above) or if I’m using it in a fresh salad I’ll just mix the dressing in and then pack it for lunch, so that it’s more wilted (softer?) by the time I eat it.
That wholefoods salad looks amazing! As does the flip yoghurt, yum yum!
Ugh, I am so ready for winter & sickness to GTFO. I was fine Monday, a little sore throat but went to the gym, worse on Tuesday so I took a “rest” day (being a stay-at-home mom means not a ton of rest) and by yesterday I felt like I got hit by a mac truck. I had to make the husband stay home so I could sleep, hydrate and take meds. I am finally feeling a bit better today but man that cold really crept up on me.
