WIAW–Lately

Good morning everyone! I’m in Kansas City and loving being home with my family! I had a great “girls night” with some of my and mom’s friends last night at La Bodega (a great tapas place) and I’m excited to see my little brother and an old friend today! Gotta get in as much as I can while I’m here!

For today’s What I At Wednesday, I thought I’d share some of the things I’ve been eating over the past few weeks (aka whatever I remembered to take a picture of). If you’re new to WIAW, head on over to Peas and Crayons to check it out!

Peas and Crayons

For breakfast I’ve been mixing things up with more eggs and veggies, or carbs in the form of bananas or plantains.

Bananas cooked in a skillet with sunbutter:

And plenty of green juice!

Lunches and dinners have been a lot of whatever I manage to throw together, including snack plates, salads, mishmosh of whatever I have in my fridge (that’s a technical term), and salads from local food places.

Spiralized zucchini with tomato sauce, spinach, fresh corn (from the farmers market!) and Trader Joe’s chicken sausage:

And a LOT of “ice cream” for dessert and snacks made from my Viatmix. This one was pineapple, mango and strawberry. I make it with about 5 ice cubes, 1/2 cup almond milk, stevia, vanilla, a pinch of salt and xantam gum.

I also had a banana and almond butter sandwich, a fiji apple and some carrots both days during our lunch break of the Bar Exam:

And of course, after the exam, my drink of choice: gin and soda with lime!

  1. Do you not eat carbs such as oats, rice, breads, noodles, etc? If not, why?

      • Hey Beth! Thank you for reading! I got your e-mail but haven’t had time to respond, computer time is limited while I’m at home. I do eat gluten free and soy free. I discovered that I have a gluten and soy intolerance almost two years ago, and I also think I just have IBS generally, so I have a lot of stomach issues and try to watch what I eat. I do eat carbs, just gluten free ones! I’m really just experimenting with different foods until I figure out what works best for me, still working on it! Feel free to send me any more questions!

  2. I’ve never tried plantains, but I’ve always been very intrigued by them.

    Drink of choice? Hmm… Depends on my mood, what/if I’m eating, and the environment, but usually I’ll go with either a glass of reisling, sangria, or a margarita. If I’m doing non-alcoholic, it’s usually just water or unsweetened iced tea!

  3. I usually go with a beer when I’m out for drinks. Right now my favorites are Grasshopper and Corona. Heineken is pretty good too.

    I’ve never tried plantains. While I was in university I had a friend from the West Indies who ate them all the time though.

    • They do love them! I like their taste as is, but maybe they’re just not for everyone! Have you tried a much darker/brown one? I think those are better!

  4. Good to see that your breakfasts haven’t changed much in your time away. Eggs look so good!

    I’ve had a plaintain sandwich before with the “bread” made out of broiled plaintains. The inside was some type of shredded chicken. I love cuban food 🙂

  5. I’ve never tried cooking with plantains before (I have had them in chip form though) but the current blogger obsession with them has me curious…maybe I’ll pick some up on the weekend.
    Lately my drink of choice has been a Tom Collins, but I recently discovered that I actually really like cider, so might switch to that next time I go out.

  6. Just discovered you are back! I hope you are to stay! Love seeing all your yummy food. It looks so good. I need some Tj’s sausage and avocados! The vitamix ice cream looks good. I am trying to convince my husband he needs to buy me one!

    My favorite breakfast as of late is definitely breakfast cookie dough cereal from the Fitnessista. I’m loving the coffee banana version I created, but any version tastes amazing!
