Good morning everyone! I’m in Kansas City and loving being home with my family! I had a great “girls night” with some of my and mom’s friends last night at La Bodega (a great tapas place) and I’m excited to see my little brother and an old friend today! Gotta get in as much as I can while I’m here!
For today’s What I At Wednesday, I thought I’d share some of the things I’ve been eating over the past few weeks (aka whatever I remembered to take a picture of). If you’re new to WIAW, head on over to Peas and Crayons to check it out!
For breakfast I’ve been mixing things up with more eggs and veggies, or carbs in the form of bananas or plantains.
Bananas cooked in a skillet with sunbutter:
Baked Plantain with protein “sauce” from Purely Twins:
Eggs with sauteed spinach (and ketchup), avocado and banana slices:
And plenty of green juice!
Lunches and dinners have been a lot of whatever I manage to throw together, including snack plates, salads, mishmosh of whatever I have in my fridge (that’s a technical term), and salads from local food places.
Salad from Pret A Manger:
Spiralized zucchini with tomato sauce, spinach, fresh corn (from the farmers market!) and Trader Joe’s chicken sausage:
Eggs, chicken sausage, spinach, carrots and avocado topped with seasoning and ketchup:
TACO JOINT with Kelsey, Lindsay, Bethany and Erin!
And a LOT of “ice cream” for dessert and snacks made from my Viatmix. This one was pineapple, mango and strawberry. I make it with about 5 ice cubes, 1/2 cup almond milk, stevia, vanilla, a pinch of salt and xantam gum.
I also had a banana and almond butter sandwich, a fiji apple and some carrots both days during our lunch break of the Bar Exam:
And of course, after the exam, my drink of choice: gin and soda with lime!
Have you ever tried plantains?
What’s your go to drink when out with friends (non-alcoholic as well!)?
What’s your current favorite breakfast?
i have had eggs and toast for every single breakfast for the past while lately. i just can’t change it up. it’s my fav! have fun today girl! so happy to hear you’re with the fam!
Do you not eat carbs such as oats, rice, breads, noodles, etc? If not, why?
Thanks. I’m new to your blog so not familiar with your diet choices/reasons yet!
Do you eat gluten free for some reason? Thanks again!!!
Hey Beth! Thank you for reading! I got your e-mail but haven’t had time to respond, computer time is limited while I’m at home. I do eat gluten free and soy free. I discovered that I have a gluten and soy intolerance almost two years ago, and I also think I just have IBS generally, so I have a lot of stomach issues and try to watch what I eat. I do eat carbs, just gluten free ones! I’m really just experimenting with different foods until I figure out what works best for me, still working on it! Feel free to send me any more questions!
I’ve never tried plantains, but I’ve always been very intrigued by them.
Drink of choice? Hmm… Depends on my mood, what/if I’m eating, and the environment, but usually I’ll go with either a glass of reisling, sangria, or a margarita. If I’m doing non-alcoholic, it’s usually just water or unsweetened iced tea!
I actually used to hate iced tea, but I like it now! Haha guess it’s a growing up thing?
I usually go with a beer when I’m out for drinks. Right now my favorites are Grasshopper and Corona. Heineken is pretty good too.
I’ve never tried plantains. While I was in university I had a friend from the West Indies who ate them all the time though.
I love Corona in the summer!
I have missed your WIAW posts!!
I always saw mishmosh haha, it’s all very technical…
Those tacos look SO GOOD!
Haha thanks, Emily!
Fave breakfast: overnight oats!
I love how Lori and Michelle LOVE plantains so much! Im not sure I love plantains though. I think i need to figure out how to make them taste good. They taste bland to me
They do love them! I like their taste as is, but maybe they’re just not for everyone! Have you tried a much darker/brown one? I think those are better!
Good to see that your breakfasts haven’t changed much in your time away. Eggs look so good!
I’ve had a plaintain sandwich before with the “bread” made out of broiled plaintains. The inside was some type of shredded chicken. I love cuban food 🙂
Haha staying real! And that sandwich sounds so cool!
Oats are my fav for breakfast…obviously 🙂 Your eats look so good!!! I’m all about the bloody mary. I have a hard time turning one down!
Thanks! And Bloody Marys are always good!
I really like the idea of cooking a banana in a skillet for breakfast! I rarely branch out from my beloved oatmeal but that is something I’m definitely going to try.
It was definitely branching out for me, but I literally had nothing to eat except bananas so I thought, why not?
You have such awesome ideas & meal plans!
I love using my blender to make fruit concoctions too. YummO!
Thanks, I just kind of make them up as I go!
Everything looks so delicious! How do you do the bananas? Just sauteed in the skillet? My fave breakfast has gotta be pancakes but when I don’t have time I opt for oats!
Yea, I just put some coconut oil in my skillet and sliced up the bananas and tossed them in! It was super easy!
I’ve never tried cooking with plantains before (I have had them in chip form though) but the current blogger obsession with them has me curious…maybe I’ll pick some up on the weekend.
Lately my drink of choice has been a Tom Collins, but I recently discovered that I actually really like cider, so might switch to that next time I go out.
Haha obsession all thanks to the Purely Twins! I never would have tried them if they didn’t love them so much!
I am alllll about the vodka tonic, but gin works too 🙂
I have recently become obsessed with eggs and avocado together – it so so yummy. I also love eggs with broccoli, which could be seen as odd, but its yummy.
eggs and avocado are great!
I’ve never had plantains! Lately I’ve been craving oatmeal every.single.morning! I put some PB, banana butter, & almonds in there, and I’m a happy girl 🙂
LOVE oatmeal! I’m eating that while I’m at home for breakfast!
wine is usually our go to or a margarita.
and yay for plantains!!!! looks yummy 🙂 glad you are loving them too!!
I love a good margarita!
Bananas cooked in a skillet? Why have I never done this before?!
I hadn’t either!
Those meals look great! I wish plantains were readily available here in Australia, but I’ll have to give frying up a banana a go!
No plantains? I wonder why!
Plantains mixed with sweet potato= YES!
Go to drink when out: micro brew if they have something good, otherwise vodka soda with lime.
Just discovered you are back! I hope you are to stay! Love seeing all your yummy food. It looks so good. I need some Tj’s sausage and avocados! The vitamix ice cream looks good. I am trying to convince my husband he needs to buy me one!
I love plantains! I actually made a plantain banana bread a few weeks ago. Find the recipe at http://www.hungrygatorgal.com/2013/07/plantain-banana-bread.html.
My favorite breakfast as of late is definitely breakfast cookie dough cereal from the Fitnessista. I’m loving the coffee banana version I created, but any version tastes amazing!
