Goooood morning everyone! Last night started my week of puppy sitting with Molly! I love having my little companion with me, and although I normally find going back and forth between sleeping at her apartment (yes, she has her own apartment!) and getting food and clothes from mine stressful, hopefully not actually having anywhere to be all week will make that easier…

Anyhoo, for this week’s What I Ate Wednesday I have foods that I’ve been eating lately, mostly including things from the Healthy Living Summit! If you’re new to WIAW, be sure to head over to Peas and Crayons to see what it’s all about!
First off, we had some GREAT sponsors at the Healthy Living Summit this year, including Blue Diamond! I’ve been eating a ton of almonds since I approached their table and they said, “Take as much as you want!”
I had to resist and only take one of each… Haha should have gotten more! Especially since I’m unemployed…
I tried their Salt ‘n Vinegar ones which have a VERY strong flavor, but I really liked it! I also ate the mocha ones, which were great too (love anything coffee flavored).
Another snack I ate traveling (and a second while studying) was this Rise Protein Bar. I was actually shocked that it’s such a tiny little bar and holds about 130 calories, but this paired with an apple kept me full for another couple hours until I got home!
When we went to Spoonriver for dinner on Friday night, I ordered the Ginger Lemongrass Rice Noodle Salad. Um. This was AMAZING. It had so many flavors and textures and was probably one of the best dishes I have ever ordered. I wish I could re-create this at home!
Breakfasts at HLS included oatmeal, fruit and occasionally eggs. I have to say the food wasn’t quite as good as last year, although last year included Love Grown Granola, so you can’t really beat that! Haha.
Lunch on Saturday was a buffet that feature fajitas, so I grabbed some salad and then fajita ingredients, including chicken, rice, beans, salsa, and sour cream:
And of course drinks! You don’t think drinking when you think Healthy Living? It’s good for your soul, I promise.

I love the salt & vinegar almonds, they’re my favorite! I should’ve gotten that dish at Spoonriver — I kind of let the waitress talk me into the Greek salad, and it was good, but a little too much lettuce and not enough toppings!
Oh no – a salad is ALL about the toppings, especially when you’re eating out!
oats…obviously! Was there any other option? And yes I may be referring to this bowl of goodness for both breakfast and lunch 😉

Yes you do!!! I don’t remember if I’ve seen them in a store yet, I’m sure they’re out there somewhere!
That noodle salad sounds really good! You should make almond butter with those mocha almonds!
Breakfast is still overnight oats at least 4x during the week. Its just so easy to bring with me to work. I keep thinking I’ll crave warm oats with the cooler temps but I haven’t yet.
Haha already ate them! Only had one package, but that’s why I wish I’d gotten more of one kind: to make almond butter!
I also only took one of each of the almonds, and am totally kicking myself for it now. Next year I won’t make that mistake with the swag!

Oatmeal for breakfast has been my go to for quite awhile now! Spoonriver was on my list to try while I was home visiting this summer but we were too busy and didn’t get a chance. That meal looks fantastic.
You MUST go next time you’re there!

Oh gosh I can’t remember all the beers – I got the Indian Pale Ale but I can’t remember the others

I love Rise bars so much…as well as Blue Diamond almonds. Every time I go to Target, I find myself in the aisle where the nuts are…picking up a container of the toasted coconut ones. Ugh so good.
Oh I got the toasted coconut but I haven’t tried them yet! I guess I’ll dig into those next!
I’m seriously loving all the almonds we were able to get at HLS. I’m a big fan of both the strawberry and the coconut, but I still have a bunch of flavours i haven’t even gotten to yet!

Looking at all the swag you attendees got makes me a smidgen jealous. An really, how could you not make full use of the opportunity to get as much as possible?!
The fajitas you so good. Maybe some kind of Mexian food should be on my meal plan soon.
I’ve been trying many new lunches lately and some of my favourites were Cauliflower Gratin and Squash Casserole. Just perfect comfort food.
Didn’t want to be greedy! Cauliflower Gratin sounds delicious!
I love Blue Diamond almonds! My favorites are blueberry and toasted coconut! Especially mixed into yogurt.
My breakfasts and lunches are all over the place. Usually some combination or yogurt, nuts, eggs, and veggies! My favorite right now is an over easy egg on a piece of toast with lots of strawberry or blueberry jelly! it’s weird….but so salty/sweet good.
I keep hearing about toasted coconut, I think I’ll be trying those next! And that toast/jam/egg combo sounds delicious!

Your restraint at the almond table is impressive. I have seen quite a few HLS recaps with gobs of almond packets in the pictures. The salt and vinegar ones are probably pretty good for satisfying that snack craving. I haven’t had the chip version in awhile but I remember always eating just a few chips then having my fill so those are probably the same way.
Haha I think I should have just gone back a couple times in different outfits to make myself feel better about it!
My breakfast & lunch are the same meal and I have been obsessed with sauteed squid and chicken and catfish!! Well, not all together, but as my meals! 😀 SOO YUM!
