WIAW–Rainbow Day

I hope you’re all having a good week so far! I’ve only got 2 full days and then tomorrow night I’m off to Charleston for my friend’s wedding! Since I’ve got a million things to do, let’s move on to this week’s WIAW! Today’s food is from Monday (per usual…). I was ridiculously hungry all day but managed to get in some colorful meals!

What I Ate Wednesday Healthy Holiday Recipes

I woke up early and was already hungry, so I grabbed half a banana and some almonds before heading to the gym to do an upper body workout for Tina’s Best Body Bootcamp.

When I got back I had some coffee…

And then my breakfast, which was (shockingly) a sweet potato with 2 over easy eggs and sriracha (no avocado, this was a recycled photo).

I headed to school and after class I was starving, so I had oatmeal with nuts from Starbucks while I did a little work.

When I got home I was already hungry again, so I had lunch #2: sautéed peppers, carrots, zucchini and 1 Trader Joe’s chicken sausage.

A little later I had a bowl of protein ice cream!

After my physical therapy appointment I got back hungry so I threw together another quick meal (shockingly similar looking to lunch…). Sautéed peppers, carrots, spinach and 2 Trader Joe’s chicken sausages.

For dessert I made an interesting chocolate mousse concoction… It was pretty good but not amazing: cocoa powder, stevia, almond extract, and 1.5 T of almond flour. I also had a handful of walnuts! So good.

  1. throw some eggs in with those veggies and chicken sausage and our repeat meals could be almost identical. i tried to stop myself from eating the same breakfast over and over again by not buying sweet potatoes at the grocery store last week, but now i’ve just been putting eggs on an english muffin. i can’t get over how much i love the avacado/sriracha combo and i will be forever indebted to you to for introducing me to it. seriously, as if i didn’t adore you enough.

    • Haha I saw that you switched out the sweet potato for an english muffin! I have to eat something different tomorrow since I’m out of sweet potatoes! I might just make plain oatmeal and top it with eggs!

  2. Those sauteed look great. I love the taste of roasted carrots.

    My repeat meals are salads. Not a terrible thing to repeat I suppose, but they all look the same. Sometimes I change out the chicken for tuna though. Lol. That’s my “change.”

    Have fun at your friend’s wedding! Sounds fun.

  3. Your meals always look amazing! Food envy. I am horrible about getting in a food routine and eating the same thing, BUUUUT if it’s not broken then don’t fix it.. right?

    • I’m the same way, I get in food ruts and I just want the same things over and over! Nothing wrong with that if it’s healthy!

  4. Oatmeal oatmeal and more oatmeal…it’s what I have every morning…my body now craves it which is crazy since I hated it until recently haha…decided to try out a few recipes I’ve seen in the blog world and they hooked me! I love that egg, sweet potato, avocado and sriracha combo too 🙂

    • Haha I had oatmeal every single morning for all of last year, I just switched up breakfasts after the marathon and I’ve been on the sweet potato kick since then!

  5. I think your breakfast & dinner are pretty tasty looking, yum! I find your dessert creation interesting… curious to try something similar, but Stevia affects my tummy sometimes. 🙁 I’ve been doing a repeat breakfast of avocado eggs & bacon. So good!

  6. I’ve been repeating waffles for breakfast and salads with roasted veggies for dinner like crazy the past few weeks. I just can’t help myself, sooo good!

    I’ve been changing up dessert and having a small cup of cereal later in the evening. It’s not as sugary and gives me a carb boost before bed which helps with early morning workouts!

  7. Busy days call for easy meals. Those sound pretty healthy and tasty though! I repeat breakfast the most. I’ve been eating a bagel with some homemade chocolate almond cashew butter I made. That was just because I was leaving Chicago yesterday and didn’t want to buy anything. Roomy works at Sbux so we get a lot of bagels and stuff that they’d throw out otherwise. Usually I’m a smoothie or oatmeal girl. Desserts…well, I’m a big fan of banana soft serve, or mug brownies where you make a single serving brownie/cake mix (equal parts cocoa and flour, some coconut oil, honey or sweetener, vanilla, liquid) and microwave for one minute.
