Happy Birthday to me, Happy Birthday to me, Happy Birthday dear Kaaaaaaaatie, Happy Birthday to ME!
Yep, today I am 26 years old! Good lord that sounds so old to me. Always thought I’d be married and have a career by now… Hmm. Anyway, despite my old age, I do LOVE my birthday. I mean, come on, a whole day (aka week) to celebrate me? Bring it on!
Today I don’t have much going on – heading downtown to do a little shopping and spend some birthday money, but I’m just going to pretend that tomorrow night’s Halloween celebration is for me and I’m also having a PARTAY on Saturday! Wild.
Anyway, what’s better for a birthday breakfast than a bowl of berry-filled oatmeal? Am I right? I’m sure you could have thought of other things… but that’s what I have for you today!
Be sure to head over to Peas and Crayons to check out the rest of the WIAW fun!
Disclaimer: I was provided coupons to purchase Driscoll’s berries but was not compensated in any other way. All thoughts and opinions are my own.
Who doesn’t love berries?
Raspberries are probably my favorite, tied with strawberries. I just love their texture! Plus I like stuffing the empty space in the middle with almond butter. Or chocolate. Or both. Just a suggestion for you all.
When I heard yesterday was National Oatmeal Day and that I had the opportunity to use some fresh Driscoll’s berries, I knew I wanted to make a new kind of oatmeal. Same basic, easy recipe but different add-ins!
The result? Delicious.
Ingredients:
1/3-1/2 cup oatmeal (or oat bran)
1/3-1/2 cup milk of choice
1/3-1/2 cup water
1/2 T psyllium husk (optional – can also use ground flax or chia seeds)
3 egg whites
1 tsp cinnamon
1 packet Stevia
1 tsp vanilla
3/4 cup fresh raspberries
Directions:
First, place all dry ingredients in a small sauce pan. Add water, milk and vanilla, turn on heat and allow to simmer. Stir occasionally. Add in egg whites and raspberries, stir vigoriously to mix egg whites and raspberries into oatmeal until egg whites are cooked and oatmeal reaches desired consistency. Top with 1 T of nut butter, or any other toppings!
You could also use cocoa powder instead of cinnamon to make Chocolate Raspberry Oatmeal. I considered it but was just dying for some cinnamon! That’s what I love about Oatmeal – you can adjust the add-ins to fit whatever you’re craving!
If you could make any flavor oatmeal right now, what would you make?
What is your favorite kind of berry?
When is your birthday?!?
i love everything raspberry!! happy birthday, girly!! 🙂 🙂
Thanks, Linz!
I LOVE birthdays.
ENJOY AND CELEBRATE YOU!!!
Thank you!!! Haha I love birthdays too!
HAPPY BIRTHDAY! It’s also my boyfriend’s sister’s birthday today, and it’s been requested that I make an ice cream cake for her. Delicious, but depressing because I’m lactose intolerant and can’t eat it! Whomp whomp.
I could definitely go for some raspberries in overnight oats right now! I’ve still never made oatmeal on the stove. Weird? Maybe.
My birthday is on December 27th, so I’ve never really been big on my own birthday. I sure love other people’s birthday’s though!
Oh sad! I’ve never made an ice cream cake, that sounds difficult! And not weird that you haven’t made oatmeal on the stove, I’ve found most people haven’t!

My birthday is on valentine’s day so I feel you on the holiday birthdays. Their fun because extra celebrations are going on but not all at the same time!
I know SO many people who were born on Valentine’s Day, which is kind of weird! I think on my facebook I have like 6 friends!
Hooray for birthday celebrations! Happy birthday!
Thanks Kierston!
Happy birthday! My favorite oatmeal currently is cinnamon raisin with a drizzle of maple syrup and a spoonful of peanut butter 😀
Thanks, Allison!
That oatmeal looks super fluffy and yummy. I can’t wait to try it since I love oatmeal! Happy Happy Birthday!!! 26 isn’t old…at least you don’t have to state that your age is 29 + 1. Although, 30 isn’t so bad! It’s like 24 but…better! Make this the best birthday yet. 🙂

Happy HAPPY birthday! Hope you ahve an amazing day. And please stop saying 26 years old, I have a good few (I’m not saying a decade…) years on you, and I still consider myself to be young!
All those years, still can’t type “have” correctly! 😀
Haha it just feels old for someone still being supported by their parents, I think that’s why it gets to me! I feel like I should be 22!
