Hey everyone, happy Wednesday!
Before we get onto this week’s WIAW, I wanted to let you all know how my IT band is doing. I’ve been seeing a physical therapist but so far I’ve seen zero improvement. I have been running, about 4-5 miles a week, so I decided yesterday morning (after a pathetic half mile) that I would take off a full two weeks of running. I really hope this helps. I’ve taken off a week at a time, but clearly that didn’t do much. I never thought I’d be the type of person that wanted to cry because she COULDN’T run! Crazy how life changes…
But anyway, enough of that, on to today’s WIAW, which comes from Monday of this week! If you are new to WIAW, head over to Peas and Crayons to find out what it’s all about.
Breakfast was a repeat of… the last 6 weeks or so. Haha, this is my current favorite breakfast. It’s filling, it’s good and its really easy and quick to make! 2 over easy eggs on a microwaved sweet potato with 1/4 avocado and sriracha sauce!
After breakfast I got some work done and then headed to school for my only class of the day. After class I headed to the El (train/subway in Chicago) and went back to Lincoln Park for my PT appointment. I had an hour to kill so I grabbed lunch from a grocery store salad bar. I forgot to take a picture… but it was lettuce, hearts of palm, corn, peas, and red pepper, then I topped it all with some cottage cheese.

After my appointment I headed to Starbucks to finish some essays for an application. I was there for a while so I grabbed a coffee, a KIND bar and their fruit cup.
Once I finished up, I headed to the gym and did 20 minutes of cardio, followed by about 40 minutes of full body weights. After the gym I stopped at Trader Joe’s to get some groceries and then back home for dinner.
I had some leftover veggies from the Whole Foods hot bar, so I warmed those up and had them along with a microwave muffin that I made (1 T coconut flour, 1 T almond Flour, 1/2 T Flax, 2 egg whites, 2 T coconut milk, baking powder, stevia and vanilla). It was pretty good!
Since my dinner was lacking protein, I also had some protein ice cream (okay, okay, I planned it that way). I made plain protein ice cream and added 1/2 Cup frozen blueberries.
An hour and a half later I had an evening snack of… PROTEIN ICE CREAM! Haha, are you shocked? It’s a good thing my ice tray only has the capacity for enough ice cubes for two of ice cream… This time I added about 3/4 cup frozen strawberries. I was feeling fruity!

My favorite evening snack is a little piece of dark chocolate.
I have been loving frozen mango’s lately…make a mango one next!
I almost bought frozen mango at TJs this week! Haha maybe next week!
my wiaw post is all about my favorite snacks today and my favorite evening snacks are definitely either cereal or a protein shake. i used to have ice cream almost every night with my parents (my dad is an ice cream FIEND) and i think protein shakes make me feel like i’m having a big bowl of ice cream. also i cannot get enough of that breakfast – i’ve been eating it like crazy too!
Haha I think that’s why I like protein ice cream so much – it’s like a replacement for getting frozen yogurt every day!
I know how frustrating it is, but taking some time off will be good for your body! I had to jog last night in a class I took at the gym, and I was worried that my knee and shins were going to hurt, but I had no pain! And that was only after one week of rest from running. I bet in two weeks, you’ll see a lot of improvement!
I think the hard part for me is I can usually run at least a mile and feel great but then it hits me during that second mile! so it’s hard to gague how well it’s going. I hope this time off will make the difference!

That microwave muffin looks good. I just love making things in the microwave!
And I love the idea of adding blueberries to your ice cream. I have a bag of frozen berries at home that would be perfect.
My favorite evening snack is a banana protein bread made in the microwave. I think either cake batter, or a peanut butter milkshake protein ice cream is in order next!
I’ve done cake batter, that was a good one! But I’m out of butter extract. I have peanut butter extract but it smells so weird… haha I’m nervous to use it! I think I’ll have to give it a try though!
And that banana protein bread sounds good!

Lately I’ve been having Greek yogurt mixed with casein powder for a bedtime snack. Usually topped with some TJ’s cat cookies or cereal…so good!
I’ve heard casein powder is good before bed, but I’ve never tried it! What brand do you use?

Lately I’ve been enjoying chocolate pudding (1/4 cup pumpkin, 1/2 scoop chocolate protein powder & 2 tbsp water) with pretzels. It makes me feel like I’m a child again eating those delicious dunkaroos Ha ha
Oh that does sound good! I love making puddings but haven’t done it in a while!
I need to jump on this eggs-on-sweet-potato breakfast train. It looks so good! And maybe coconut ice cream next? or mango? or amaretto?
Oooo coconut is a great flavor idea! I’ll have to figure that one out!
I really need to see what this protein ice cream is all about! I tried the eggs on the sweet potato yesterday…so good. Where do you find those Health Warrior bars? I’m on my last Larabar and looking to try something new!
I’m glad you liked the eggs and sweet potato mix! And I buy them at Whole Foods, but I haven’t found them at every Whole Foods location.
Eggs, sweet potato, and avocado is the best combination! Add hot sauce and I’m in heaven:) Happy WIAW!

I’ve been loving apple “nachos” lately which is sliced apples with either melted peanut butter or homemade caramel sauce with a spoonful of nuts and a few chocolate chips on top. SO GOOD!

So sorry about your IT band but taking time off is probably smart (although incredibly frustrating I’m sure!!).

My favorite evening snack is a mug of cereal, it’s dangerous though because I can’t always stop at one mug!

They are so good! but pretty expensive for how small they are… Haha I’m going to look into making them myself!
Haha I think I need to try out this protein ice cream! You could do a chocolate peanut butter version… Not sure if you’ve done that one already, but it sounds right up my alley! 😉
I’ve thought about it, but the peanut butter extract I bought sounds so weird… I’m too scared to try it!
I am very detailed on my bed time snack in my post today! LOL!! Yogurt + Sunflower Protein powder + peanut butter by the spoonful right out of the jar. The classic “I live along” peanut butter and spoon habit. I hate your IT band. BUT you are smart by taking time off of running.

Protein ice cream is definitely one of my fave evening snacks too! Great idea taking two weeks off running, I had a lot of IT band problems and rest was just the only thing that sorted me out 🙂

My favourite evening snack is vanilla Greek yogurt with granola. It’s really filling and it satisfies my sweet tooth! 😀

Mmmmm, that ice cream looks good. I’ll have to test it out. Not sure if you are a fan of the holiday flavors, but maybe a mint chip variety (semi-healthy) 🙂
That’s a good idea! I’ll have to find some mint extract! I have peppermint but that’s a little different!

Hope the 2 weeks off helps. IT band injuries can be tricky. Try to be patient & kind to yourself. It WILL heal – just may take some time. 🙂

Your breakfast looks delicious! I’m more of a sweet breakfast person but I’d totally enjoy that for lunch or dinner 🙂 One of my fave post-dinner eats is popcorn! It keeps my belly full and I like the crunch. Or sometimes I’ll do a yogurt mess with whatever sounds appealing 😛

It can be really hard to stop doing activity. There was a period after foot surgery where I wasn’t allowed to even sit or stand, I had to be laying down with my foot elevated for 3 weeks! Talk about torture. Now, 1.5 years later, I am finally allowed to jog or run (it really wasn’t even feasible before now).
I do love a good mug brownie as an evening snack or banana soft serve. Your next flavor should be Cinnamon!
i been having eggs over easy with a sweet potato and spinach for breakfast lately too! i try to switch it up with oatmeal its the best! my fav snack lately has been avocado chocolate “pudding” with a banana or popcorn..never realized how easy it is to make your own not get store brought and im addicted now lol
I am really sorry to hear about your IT band. I have had trouble with mind and in all honesty it just takes quite some time to heal. I went to PT as well, and for the first 4 weeks felt like there was absolutely no improvement and I was not running on it at all. However, starting at about week 5 it began to slowly get better. Clearly this is just my personal experience, everybody’s body is so different, but I would suggest taking a full month or two off and just letting it heal fully. Roll on the foam roller as much as possible, ice it, and do your PT exercises. Again everybody’s body is different, but I found that really strengthening my hips during this time helped, so it may be worth a go! Good luck to you!!
Maybe it’s because of the holidays, but I have been loving all things gingerbread and peppermint flavored lately so I definitely vote one of those to be your next protein ice cream flavor!

Ugh, sorry about the continued IT issues. My doctor just told me to take a week off running too so I understand. Here’s hoping that a mini break from running will help so we can heal and continue to run in the future!
