Hey everyone! Happy WIAW! I hope you’re all having a good week! Before we get started, I wanted to let you know about a little promotion that Pretty Muddy has going! I’ve never run one, but I’ve heard back from other bloggers and apparently it’s a blast! I’m actually in a smidge of a rush this morning, so we’re going to do this WIAW a little differently, with the pictures with just quick descriptions! This food is all from Sunday, a day which I had a semi-lazy morning, then headed out to coffee for a couple hours with a friend, went to get frozen yogurt with another friend, had dinner at home, and then off to a movie!
1. French Toast Scramble by Carrots N Cake for breakfast
2. Bowl of corn puffs with berries (they’re down there…)
3. Went back for more – this time more berries than corn puffs
4. Lunch Part 2 (after coffee): sauteed greens and steamed carrots in coconut oil with hummus mixed in
5. FROZEN YOGURT! Forgot to take a picture… I got toasted marshmallow and black cherry, with some reeses cup pieces, peanut M&Ms, raspberries, kiwi, and 2 cherries.
6. Dinner from the slow cooker! Guinness Short Ribs with greens, carrots and mashed potatoes on the side!
7. Post-Movie nighttime snack – dark chocolate!

Have you ever done a mud run/obstacle race before?
When was the last time you had ice cream or frozen yogurt?
I did a To Hell and Back 10km in October last year…it was hellish! Mud, a mountain, rivers….10ft high walls. I was in agony for about a week after!

I’m hoping to do a Tough Mudder in the Spring…mud races just look so fun!
And I just had froyo on Sunday night…more candy than anything else, just how I like it!

Awww my boyfriend and I were going to go for fro yo this weekend, but our favourite place was closed 🙁 So we decided to pout and not go LOL

oh man those corn puff/berry bowls look awesome. i’ve been missing berries so much since the summer! i want summery fruits back – i get tired of apples and pears really quickly but for some reason berries are always delicious. frozen ones just don’t do it for me.
I agree, I love summery fruits! I’m lucky my parents are footing the grocery bill…
I haven’t had ice cream/fro yo in way too long. I’m sure the fact that the temps have been in the negatives and single digits lately has something to do with it. 😉

I have not done one of the mud races, but I hope to do so before the end of the year!! They look so fun haha…and I had froyo last night…always have a container in my freezer for dessert 😉 Last time I went to a froyo shop, however, was Saturday night. Joe wanted it for his bday dessert (i.e. he knew I wanted it instead of a fancy smancy dessert at the restaurant we went to so he said that’s what he wanted to do…definitely have a winner here)

Haha that’s okay! And it was very good, but not super filling, I think I’d use more nut butter or all whole eggs next time.
I had to read it several times to try and figure it out and that’s what I understood? Oh well, who knows.

New to your blog, its awesome and inspiring thanks. I’m being my lifestyle change and noticed you mentioned coffee. How do you drink yours so that it isn’t black but still healthy? Thanks for any help or advice you can give.
Thanks for reading, Kathleen! I drink my coffee with just a little bit of almond milk in it, I don’t need a sweetener or anything. If you do want some sweetener, then try some stevia. I’ll also put a little bit of cinnamon in my coffee sometimes, especially if I’m somewhere like Starbucks.
Thanks 🙂 I’ve tried almond milk but it always separates and doesn’t stay mixed with my coffee. Am I doing something wrong? I have been using agave nectar for sweetener when I need it too 🙂 Love the cinnamon idea. Thanks so much!!!!

Oooh, do you have a recipe for the Guinness Shortribs? They sound amazing! And I almost always do that with my frozen yogurt…I’m just too excited to eat it to take a picture! Happy WIAW! 🙂
We got the recipe from the book that came from the slow cooker. It was basically brown the sides of the short ribs (12 ribs – but we did 8) in the cooker in 2 T Olive Oil, then put in the pot the ribs, 24oz guinness, 2 carrots chopped, 1 onion chopped, 1 leek chopped, 2 stalks celery chopped, and 2 garlic cloves chopped. Then cover with the lid and cook for 10 hours on low.
I did a mud run two years ago and had a blast and then did one this past year and tore my acl and meniscus….never doing one again! Not trying to tell anyone not to do them though…they are super fun…I was just a dummy and landed wrong when I jumped off a wall.

Black cherry fro yo sounds so good! The last time I had fro yo was last week and I got a really good peppermint flavour.

I’m signed up to do a tough mudder in April!! So excited for that, but also slightly intimidated by the obstacles haha. Your french toast scramble looks great, but I’m vegan. womp womp

I’ve always loved the idea of a mud run! I was looking at the Spartan Race at one point, but never made a move. The breakfast there sounds interesting and yummy. What is in it?

I have done a few mud runs/obstacle course races before and they are seriously so much fun!! I hope to do another one this year at some point… maybe in the beginning or end of the summer, I know of two around then. But yeah, they are a nice change and really allow you to truly have FUN with running again. They have helped me in the best get excited about the sport all over again 🙂

I’ve never done a mud run (or a race like it) but I’ve only ever heard great things about them…I’m hoping one is in my area this summer so some of my friends and I can try it out–it’d be perfect since we’re all kind of at different levels/variations of being fit
