WIAW–Speedy Style + Pretty Muddy

Hey everyone! Happy WIAW! I hope you’re all having a good week! Before we get started, I wanted to let you know about a little promotion that Pretty Muddy has going! If you’re unfamiliar with their races, Pretty Muddy is an all-women’s mud-run featuring obstacles along the course. I’ve never run one, but I’ve heard back from other bloggers and apparently it’s a blast! It’s not meant to be competitive at all – just a fun way for you to get out there, try something new and hang out with your friends!

So why am I telling you this? They have a promotion going on! They are offering a ONE TIME $20 discount to past participants only. I’m actually in a smidge of a rush this morning, so we’re going to do this WIAW a little differently, with the pictures with just quick descriptions! This food is all from Sunday, a day which I had a semi-lazy morning, then headed out to coffee for a couple hours with a friend, went to get frozen yogurt with another friend, had dinner at home, and then off to a movie!

1. French Toast Scramble by Carrots N Cake for breakfast

2. Bowl of corn puffs with berries (they’re down there…)

3. Went back for more – this time more berries than corn puffs

4. Lunch Part 2 (after coffee): sauteed greens and steamed carrots in coconut oil with hummus mixed in

5. FROZEN YOGURT! Forgot to take a picture… I got toasted marshmallow and black cherry, with some reeses cup pieces, peanut M&Ms, raspberries, kiwi, and 2 cherries.

6. Dinner from the slow cooker! Guinness Short Ribs with greens, carrots and mashed potatoes on the side!

7. Post-Movie nighttime snack – dark chocolate!

  2. oh man those corn puff/berry bowls look awesome. i’ve been missing berries so much since the summer! i want summery fruits back – i get tired of apples and pears really quickly but for some reason berries are always delicious. frozen ones just don’t do it for me.

  3. I have not done one of the mud races, but I hope to do so before the end of the year!! They look so fun haha…and I had froyo last night…always have a container in my freezer for dessert 😉 Last time I went to a froyo shop, however, was Saturday night. Joe wanted it for his bday dessert (i.e. he knew I wanted it instead of a fancy smancy dessert at the restaurant we went to so he said that’s what he wanted to do…definitely have a winner here)

  4. I haven’t had frozen yogurt or ice cream in probably 8 or 9 months. I seriously miss it!

    Did you like the scramble from Carrots N Cake? I can’t have eggs, but if I could I think I would love it. Sounds delicious.

  5. New to your blog, its awesome and inspiring thanks. I’m being my lifestyle change and noticed you mentioned coffee. How do you drink yours so that it isn’t black but still healthy? Thanks for any help or advice you can give.

    • Thanks for reading, Kathleen! I drink my coffee with just a little bit of almond milk in it, I don’t need a sweetener or anything. If you do want some sweetener, then try some stevia. I’ll also put a little bit of cinnamon in my coffee sometimes, especially if I’m somewhere like Starbucks.

      • Thanks 🙂 I’ve tried almond milk but it always separates and doesn’t stay mixed with my coffee. Am I doing something wrong? I have been using agave nectar for sweetener when I need it too 🙂 Love the cinnamon idea. Thanks so much!!!!

    • We got the recipe from the book that came from the slow cooker. It was basically brown the sides of the short ribs (12 ribs – but we did 8) in the cooker in 2 T Olive Oil, then put in the pot the ribs, 24oz guinness, 2 carrots chopped, 1 onion chopped, 1 leek chopped, 2 stalks celery chopped, and 2 garlic cloves chopped. Then cover with the lid and cook for 10 hours on low.

    Black cherry fro yo sounds so good! The last time I had fro yo was last week and I got a really good peppermint flavour.

    Also your dinner looks seriously delicious. 😀

  7. I’m signed up to do a tough mudder in April!! So excited for that, but also slightly intimidated by the obstacles haha. Your french toast scramble looks great, but I’m vegan. womp womp

    • oh how fun! I’m sure it will be great! Haha and if you’re vegan then check out some of my regular oat recipes, and sub the eggs with protein powder!

  9. I have done a few mud runs/obstacle course races before and they are seriously so much fun!! I hope to do another one this year at some point… maybe in the beginning or end of the summer, I know of two around then. But yeah, they are a nice change and really allow you to truly have FUN with running again. They have helped me in the best get excited about the sport all over again 🙂

  10. I’ve never done a mud run (or a race like it) but I’ve only ever heard great things about them…I’m hoping one is in my area this summer so some of my friends and I can try it out–it’d be perfect since we’re all kind of at different levels/variations of being fit
