Salut!
WHEW! Yesterday was quite the whirlwind of a travel day, I left my house in Kansas City at 7:30am, flew to Minneapolis, only had a 30 min layover, flew to Chicago, took the train to school, took the bus home and finally walked into my apartment at 6:45pm, still lugging around a heavy backpack and a waaaayyyy too heavy duffel.
I. Am. Pooped.
Seeing as I’m ready for bed (writing this Tuesday night), we’re going to do a slightly shorter version of today’s WIAW, which includes my food from today: travel day! If you’re new to What I Ate Wednesday, head on over to Peas and Crayons, where you can learn what it’s all about and see the other participating bloggers!
1. Breakfast:
Started of with a hot cup of water with lemon
And then brought a piece of Udi’s GF bread with Justin’s Chocolate Hazelnut Butter, a Chobani bite and coffee with me in the car on the way to the airport.
2. Snack:
I got to the airport plenty early and by the time I was in the middle of my first flight my stomach was grumbling, so I happily took (and ate) the two peanut packets they gave me (plus more coffee).
3. Lunch #1
I had very little time in Minneapolis to find food, so once I found my gate I saw a Starbucks a couple gates down and hurried over there. I got an oatmeal (not my picture, I forgot) and put the nut mix into it, plus some cut up strawberries that I had brought in my backpack from home. The strawberries were sooooo good! Perfect addition.
4. Lunch #2:
After my second flight, taking the train into the city, walking to school and then reading for about an hour, I was getting really hungry. I didn’t want to carry my bags somewhere again so I just threw together a salad from our school’s cafeteria. It included chicken, parmesan cheese, beets, carrots, bell pepper slices, olives, and then red vinegar and olive oil for dressing. I also had an apple which I at a bit later.
I also had a piece of dark chocolate while reading (this x2):
5. Dinner:
Whomp whomp… I had very little food in my apartment when I got home but was thrilled to see that I had a sweet potato, salmon and my greens hadn’t gone bad. Unfortunately after cooking and cutting open the sweet potato I saw it had a couple mealworms… Threw it out. Couldn’t even eat the good parts. Not much grosses me out, but bugs in my food sure does. Also, part of the salmon was just… weird. I think the worms put my senses on alert. I had most of the salmon and all the greens (with extra ketchup…).
6. Dessert/Snack:
Seeing as my dinner was so… filling, I was ready for some peach sorbet (frozen peaches, ice, stevia, salt, xantham gum all mixed in my Vitamix), which I topped with chocolate sauce (sunwarrior protein powder mixed with stevia and cocoa powder) and coconut crumbles (coconut flour, stevia, vanilla, and water – usually almond milk but I didn’t have any).
Followed by some coconut butter and some more coconut crumbles, and this time I made some cinnamon sauce (exchange cocoa powder above with cinnamon).
There you have it! Workout for the day: dragging those bags around! I’m about to fall asleep right now!
Do you have a rolling bag or a duffel when you carry on? (I own rolling bag but my brother borrowed *cough*stole*cough* mine years ago…)
What do you usually grab if you have to eat in the airport or eat fast food?
Your homemade sorbet looks great! I always carry on a rolling bag and a HUGE backpack 😛 But my travel eats are all over the place, good for you for getting pics!
I need to steal my rolling bag back from my brother!
oooh and why did I think the PEANUTS were no mo’ on flights?
lately Ive been offered sugary granola bars.
PASS.
Who is giving you granola bars?! I think peanuts went away for a bit, but both Southwest and Delta offer them or pretzels!
While I have nothing against the occasional fast food onion rings or burger (everything in moderation, right?) If I’m feeling something a bit healthier, Subway is usually my go-to. Or Wendy’s salads with a few modifications – they’re expensive but surprisingly tasty for a fast-food salad.
I used to LOVE Subway! Sadly they don’t have GF bread
For some reason I really love salads from salad bars. Yours looks like it was delicious! I have a rolling bag that I use for my carry on. I’ve done a moderate amount of traveling and like to pack everything in my carry on if I can, so having the rolling bag has been great.
I agree with always using a carry-on, I fly a lot too and I hate having to check a bag!
Just hearing about those meal worms in the sweet potato gives me the heeby jeebies. Ugh. I can’t even… Haha.
Moving on… You definitely made up for your dinner with your snacks! That sorbet looks awesome.
It makes me nauseous just thinking about it…
I always bring tons of food from home- protein bars, almonds, whatever I’ll be able to take in my carry on. The gluten free and dairy free options at an airport are few and far between! I just tough it out 🙂
I like to pack a lot of snacks too! I left empty handed yesterday though, bad idea!
God I have to get on the bandwagon of making sorbet. Looks delish!
It. Is. Fantastic.
Horray for sorbet!
1. I LOVE that peanuts picture. I seriosuly cracked up for like 10 min. WHAT IS THAT?
2. Gimmie back that coconut butter! I want some right now! Or just bring some to my cube..
1. I love microsoft paint. I am so skilled since I’ve been using it for 15 years.
2. It’s almost empty. Too bad fo you.
I finally bought coconut butter….you are an enabler.
1) I have a duffel bag that came with me all across Europe when I studied abroad. It has patches all over it from all of the places it’s been to. Love that thing!
2) I usually get a Naked Juice and some sort of energy / meal bar at the airport. And I also pack a LOT of my own snacks (nuts, granola bars, etc.) I’m too picky and airport food is too over-priced!
Omg it’s sooo expensive! Granted it seems like normal pricing now that I’ve been in Chicago for so long…
wow that sounds like one crazy day! I love starbucks oatmeal..i bet fresh strawberries would be delicious in it!
I eat Starbucks oatmeal waaaay too often. Might be getting it today…
Your picture reminds me I need to drink more hot water with lemon!! http://www.colorushealthy.com
I love having it every morning! And just FYI, your name automatically links to your blog, no need to add the link in your comment, that usually sends it to spam 🙁
I have a rolling suitcase that makes life so much easier when traveling! I typically will grab a sandwich from whatever kind of deli is in the airport or a wrap of some sort from Starbucks since those are almost always in airports!
Haha I don’t think I’ve been to an airport without a Starbucks, I’d be flabbergasted!
Hope you get some needed sleep!
Thanks, Alex
Ohhhhh my gosh. Pretty sure if I found a mealworm in a sweet potato (or anything, for that matter) it would be a LONG time before I had the confidence to buy that again. DISGUSTING.
Those peanuts look to die for! So good! Haha.
My stomach is still churning…
I got a set of really chic luggage for a wedding gift and I LOVE it. I have a duffel and a rollie, so I have options. BEST GIFT EVER
I usually pack oatmeal packets and protein powder or nut butter so I can make a quick breakfast with just hot water.
Haha I need to get married JUST so I can have a big wedding registry!
You.are.hilarious!
LOVE the ‘extras’ you threw into your pics! Haha 🙂
And I agre–weird bugs in/near my food makes me gag & I throw it all right out–and I HATE wasting food, so that’s a big deal! hah
haha thanks! And yes, I wanted a sweet potato so badly but now I am totally freaked out about them. This is what I get for trying to buy organic…
You ate SO well for a travel day! I feel like I always grab a bag of Gardettos and call it good :/ I had a similar experience to your sweet potato finding with a pear. It took me 12 years again to finally try one!
omg GARDETTOS!!! I ate those so much in High school, delicious!
Ai girl your day just wore me our haha. I use a little wheeled bag for my carry on and grab subway when on the go. My first choice would be panera but i have yet to see that in an airport!
you know, I’ve never seen a Panera either! Weird…
I love that Starbucks has oatmeal! It’s such a good thing to grab on the go when you don’t want something greasy. I do find the portion a little on the teensy side though.
Haha I totally agree – it’s a little small for my taste! Sometimes I buy a banana too, slice it up and add that for a little more volume.
The chocolate sauce sounds good! Did you use Vanilla Sunwarrior? Also what ratios of the cocoa and what not? Wish I had a Vitamix!!! Some day!
I do use vanilla sunwarrior! I really don’t know the ratio, I don’t measure and just use my spoon. It’s probably 2:1 or 3:1, with more sunwarrior.
Wow, that really does sound like a crazy hectic day of traveling! At least it ended on a sweet note with your delicious evening snack. 🙂
I wish I had a Vitamix too but my new blender is pretty awesome. Maybe I will treat myself after this one breaks!
Oh wow youre sorbet looks soooo amazing!! I must re create this tonight, thanks for sharing 🙂
Yum! That sorbet dessert looks awesome! Must try it!
I’m not the best person to ask about traveling… I overpack! But I also have 2 kids in tow along with hubby. I have spinner suitcases bought recently at Costco. Love! I do a backpack carry on or one of the spinner small suitcases. I hate traveling with food allergies. I’m always starving! Not many gf options in airport that are easy to find during quick layover.
It’s so hard to find something at times, best to come prepared!
