You Thought I Was Done?

Good morning! I am safe and sound back in Kansas City!!! So glad to be home! I think it’s finally starting to hit me that the semester is OVER! Ahhhhh so wonderful! Now I have 3 wonderful weeks until my internship starts! I am one lucky girl, that’s for sure!

While I take a little time to get into a routine (and go to the grocery store… haha not much I can eat in the kitchen), I thought I’d share some more of the amazing recipes I’d been working on! That’s right, even MORE oatmeal recipes today! I decided to spread them out over 2 days as to not overwhelm you all with the amazingness. I am LOVING this technique of letting the oats and chia seeds soak up the water and then cooking them again, the consistency is so good!

Today features my current favorite: the apple pie oats. I think I like these because of the chopped apples in there, it adds a little crunch! Ahhhh now I want to make oats again! Haha I am obsessed. Dangerous.


Apple Pie Oats

Ingredients

1/3 C oats

2/3 C water (separated)

1/3 C milk (whatever your preference)

1 Apple

1 egg or 2 egg whites

1/2 T chia seeds

1/4 – 1/2 Tsp vanilla

cinnamon

Sweetener to taste

Directions

You can do this first step the night before, or right when you wake up. Combine oats, 1/3 water, milk and chia seeds on stovetop and heat until boiling. Turn off heat and cover with lid. Let sit overnight or at least a half hour. This allows the chia seeds to soak up the moisture. When you return, the liquid should be soaked up.

When you are about ready to make your oats, chop up your apple. Personally, I like to make the pieces pretty small and thin, I think they mix in better that way. It’s trial and error! Take about 2/3 of the apple pieces and microwave them for 1 min and 30 seconds. Set aside.

Add 1/3 cup water and turn the heat back on. Whisk egg or egg whites and then add into mixture. Continuously mix the oats until it looks like the eggs have mixed in well. Add vanilla, cinnamon, sweetener and microwaved apple slices. Continue cooking until they are the consistency you like and then serve in a bowl, topped with the remaining non-microwaved apple pieces and any nut butters or other toppings. PB is a pretty good one here, I’ve also done almond butter or vanilla protein powder mixed with PB 2. You really can’t go wrong…


Banana Bread Oats

Ingredients

1/3 C oats

2/3 C water (separated)

1/3 C milk (whatever your preference)

1/2 Banana

1 egg or 2 egg whites

1/2 T chia seeds

1/4 – 1/2 Tsp vanilla

Sweetener to taste

Mix the banana in well (I actually used a whisk to try and break up the banana, you can also microwave the banana for about 30 sec before putting it in to help break it down). Continue cooking until they are the consistency you like and then serve in a bowl with any nut butters or other toppings. OR do what I did and put your oats in a jar!!!

These banana oats went so well with the PB&Co Maple Peanut butter! The only problem was the jar had so many grooves at the bottom I couldn’t get it all out… Trust me, I tried:

  1. Its definitely to warm for me right now to heat stove top oats but i always prefer overnight oats anyways! at the moment I am crazy for green smoothies. I have been having one for breakfast almost every day in the last 2 weeks! soo good!

  2. yayyy i’m SO glad you get some time to relax!! if i had 2.5 weeks to just relax… i’d sleep in, go on walks, do lots of yoga, eat lots of good food, go shopping, and spend time with my family.
    i’m loving the looks of your banana bread oats! yum!

    I would love to have a couple weeks off to relax but I’m not sure what I’d do. Probably read a lot and sleep. That would be nice. Enjoy 🙂

  4. I’m soooo cold right now (it’s freezing in my office, and I’m drinking a huge cup of ice water, haha) and your oats sound like they would warm me up from the inside! (I know overnight oats are usually cold, but I usually warm mine up, haha)

  5. my fav breakfast right now are stovetop oats. For the past few months I have been doing overnight oats in a mason jar and then cooking them in the microwave in the am, but doing them on the stoves makes them so much more fluffy! I’m in love.. I add a scoop of almond butter and voila… though this morning I added in 1/2 banana for extra texture. So good!

    If I were home for 2 1/2 weeks. I would be soo board! Lol. I would paint my condo, fix the drawers in my kitchen and get a lot of baking done. Actually doesn’t sound so bad!

  6. Enjoy your 2 1/2 weeks at home – you earned them!!! Read lots of books for fun and nothing that has to do with the law, eat a lot, drink a lot, and enjoy not having a schedule and classes! 🙂 Congrats on finishing 2L year!

  7. I didn’t know you were from Kansas City!! I only live a few hours away from there! I am from Hutchinson, but currently living in Manhattan, KS for school at K-state. I’m actually in Kansas City a lot because tons of my family lives there. I love that place!

    Enjoy your break girl! I have until Thursday then I will be free, too. I can’t wait to spend some down time!

  8. Ah, I wish school was over so I could be in KC! I’ll have to let you know if I make an unexpected trip and we can hang 🙂

    If I had 2.5 weeks at home (which, well, I do after 11 more days of school!) I’d probably sit around and hang out with friends who might be back in town from school!

  9. I’m jealous that you are already on summer break. I have about 3 weeks left (including finals) and I am trying to enjoy it but I’m getting antsy. Once break comes, I’ll definitely be reading A LOT more often and hopefully starting a 5K or half marathon training program. I ran three miles last week so I know I can do it, but I don’t know which one will be better to train for. Either way, it’ll still have to be a beginners program 🙂 Happy 2.5 week break – enjoy it!
