Hey, hey! It’s Monday! I am a happy camper today because my later class was cancelled, which means rather than being done at 5:50 tonight, I’m done at 1:10pm!!! And do you know what that means? I didn’t have to get up at 5am to go to the gym before school!
So I bookmarked a recipe a while back that I kept meaning to try, and this weekend I finally did! For breakfast Saturday morning, I made myself some Greek yogurt with PB2 powder mixed in and blueberries on top, and then I made a Pumpkin Protein muffin from Kristin at Stuft Mama.
I did make a couple changes to her recipe: I used garbanzo bean flour instead of coconut flour, I only used 1 packet stevia, didn’t use any milk, and I used 2 egg whites instead of egg substitute. It turned out absolutely delicious! I am totally obsessed with these now! I made another the next day with blended spinach mixed in, and then another with sliced bananas mixed in!
I love making these muffins with egg whites because it’s a more natural way to get protein in rather than using protein powder like in my protein cupcakes. But no worries, I still LOVE my cupcakes! Haha.
Remember when I told you all about the new products I had tried out? Well there was one that hadn’t arrived at my doorstep yet, but I am so excited to show you!
Miracle Noodles!
My friend, Maddie, told me about these and how she’d seen them on Dr. Oz. I’d never heard of them, but they are gluten free, soy free and ZERO CALORIES. If they are Dr. Oz endorsed and zero calories, then I was all for giving them a try! I ordered the noodles from Amazon, so they weren’t very expensive, but not something I’ll be buying a lot of. I’m on a bit of a budget this year…
They are much more gelatinous than normal noodles, not as firm. They come packaged in water so when you prepare them you’re supposed to drain them, rinse them in cold water, then blanche them in hot water for 1 minute. That’s all!
I had bought some chicken meatballs at Whole Foods, so I decided to try out my “spaghetti”. I roasted some okra, cherry tomatoes, onions and mushrooms (after tossing them in olive oil) on 350 for 30 minutes. Then I mixed in a bit of canned tomatoes, added the meatballs and microwaved all of that. Then I put it on top of the noodles and, voila!
It was actually pretty good. The noodles really don’t have much of a taste, which makes them the perfect vehicle for sauce! I saw a few recipes on the website that suggested treating them more like Asian rice noodles, which I think would fit them a lot better than just a plain tomato sauce.
I’ll have to come up with some creative ways to use the rest of the noodles that I have! I hope you all have a great Monday, and want to leave you with one thought:

I tried Shirataki noodles back in college but I could not get the hang of drying them off so every thing I put on top got wet/runny. Maybe the Miracle Noodles are different though? The shirataki noodles definitely had some calories…
I’ve never tried shirataki noodles, but these said nothing about drying them off, I just drained them. But my sauce was already a bit watery so I don’t know if the noodles contributed!
Haha I have a big test this morning, and it’s my boyfriend’s birthday though he is away today for school. Not too exciting! I’ll live though 😉 Hope you have a good one!

I’ve had the Tofu Shiritaki noodles and they’re really similar I think. I found they worked best with creamy sauces, so I’d usually melt a wedge of laughing cow cheese, as a “sauce” so it’s still fairly low in calories, but tastes rich! They’re also good in soup, and I made a vegetable teriyaki dish that was pretty good!
That’s a great idea, I definitely want to try a creamier sauce!
why is it that classes being cancelled totally just makes your day? I’m like ecstatic when i hear one of my classes gets cancelled.

I never get to watch his show since I don’t have a TV, my friend just keeps sending me things she sees from it!

oh i loooove stuft mama’s microwave muffins!! i was on a total kick with them when i first discovered them. i still have them occasionally for breakfast or for a snack. i love how they can pack in so many good-for-you nutrients into one low cal easy-to-make muffin! have fun with them… i’ve done so many little creations with them.
those noodles intrigue me! i love my pasta, and calorie free makes them way appealing!
Haha all I can think of during the day are new ways to make them! I’m thinking of adding in some blueberries tonight for a post-workout snack!

I’ve always eaten shirataki and loved it! ^^ I guess I would say I’m a fan of him simply because he promotes my (vegan) diet and he has great tips! ^^

I saw the tofu ones at whole foods, but I can’t eat soy so these are perfect! And I love the garbanzo bean flour, it’s much less dense than other flours I’ve tried.
