Scary Pancakes, BEWARE!

Okay, okay, so they’re not actually scary, they’re just green. But some people might find that a little scary, right? I think so… humor me.

Before we get to the recipe though, I wanted to share a few fun things! Kelsey does this every Friday, but I don’t get as many awesome search terms as she does, so I have to wait to accumulate some good ones (e.g. the last time I did this was in the Spring…).

Also, I saw this gif on Sara’s blog, Nourish and Flourish, and it describes me perfectly! I was never the sexy halloween costume kind of girl…

Bahaha. I’m sexy and I know it (and no, my hands aren’t super pale, I’m wearing white gloves…)

And now, on to my pancake recipe!

Green Monster Pancakes

Ingredients

9 T egg whites

1/4 tsp vanilla

1 cup spinach

3 T flour (I used Bob’s Red Mill Garbanzo Bean flour)

2 packets Stevia*

Directions

Blend together egg whites, vanilla and spinach until spinach is blended. Then add in flour and stevia and pulse a few times to mix. Spray pan with non-stick spray and pour 1/4 batter onto pan. Wait until bubbles form and flip. Makes approximately 4 pancakes.

*you can add more stevia for a sweeter pancake, or add cinnamon or other spices

And can I please note the steam coming off these babies?

They were so good! I ate mine with some PB2 mixed with Protein powder as a sauce/syrup on top.

 

Does green food that shouldn’t be green weird you out? (anyone remember that green ketchup?!)

  1. Those look really good! I was never ever the sexy girl in costumes. Last year my costume was a duck. Random I know but it’s my quirkiness. Green skittles always made me a little skeptical. Have a great day

  2. Green foods rock. I still love the looks on certain peoples faces when they see me drinking a green smoothie, haha.

    That mouse costume is smart; you look really warm! I’ve freezed my butt off in numerous Halloween costumes before. I was really into Halloween in college but not so much now. Senior year of college my guy friend and I dressed up as Snoop Dogg and Katy Perry from the California Girls video! I went all out and even put temp. blue hair dye in my hair! Didn’t do the cupcake bra, though…haha.

    I have a green smoothie multiple times a week so pretty safe to say it doesn’t freak me out. :-p I remember loving that green ketchup when I was a kid! But really, it was kind of gross-looking, wasn’t it

    What you don’t get searches for Ryan Gosling peeing on a regular basis too? That’s weird.

  5. That is THE BEST idea ever!! I’m not a huge fan of spinach/other leafy greens, but do enjoy all their vitamin-tastic properties — so I like “hiding” them as much as possible (smoothies, puddings, brownies …). This just plays on my extreme love and heartfelt adoration for pancakes!! I’m tempted to leave work early to try them ASAP! (I won’t, but I would seriously consider it!!)
    Oh. And you make an adorable Minnie. 🙂

    • Haha I hope you like them! I put spinach into a lot of things like that because it really doesn’t have a lot of taste, especially if you add cinnamon.

Haha I was never the sexy Halloween costume girl either… I think the closest thing that I ever got to that was my freshman year of college when I dressed up as an 80’s girl in a short skirt and neon fishnet stockings, but it was nothing compared to some of the other “revealing” costumes I’ve seen! You make a cute Mickie Mouse! 😉

  8. hahaha i love that michelle tanner gif. she’s super cute. i don’t really do halloween but i’ve definitely never done a “just to be slutty” costume. i do enjoy mocking those who do though. and as for green foods – i used to be really weirded out by them but now that i have a deep adoration for spinach/realize you can’t really taste it, i’m loving anything green. i’m going to need to make these pancakes asap…just as soon as i stop making all the oats recipes you have posted 🙂

  9. I need to try adding spinach to a baked good. Everyone seems to be doing it and I just LOVE the idea of getting in vegetables without it tasting like vegetables… You know what I mean? 😛

    Anyways, thanks for the great idea! Oh, and I always tried to have some unique costumes when I was younger… Dinosaur, McDonald’s french fries, Madeline, a painter, cheerleader (times two), halloween/mcdonald’s waitress… Um. That’s all I can remember, but I’m sure there were plenty of others! Wait! I was also a fairy and a cowgirl. There- that’s 9 years of my life for ya 😀

  10. I tend to be a no-costume type of girl…haha. My friend actually invited me a Halloween party on Saturday night, and I was like, “Wait, won’t I have to dress up? I can’t go then. I don’t do dressing up.” Hahaha. Since I stopped trick or treating, I stopped caring about Halloween at all. I’ve never bought a costume, and creating one out of what I have requires SO much creative energy that I have no desire to spend on something like that haha. I was in band all four years of college, and my last three years my band director thought it’d be a bomb dot com idea to have a Halloween concert every year (dumb. Dumb dumb dumb). I HATED it, and he always made us dress up. Junior and senior years I was a “basketball player” aka put on an old jersey I got from my high school and wore sweatpants to my concert BECAUSE I COULD. Haha I was the least dedicated member of our band ever, so I tried to be as lazy an unenthusiastic about the Halloween concert as possible. Plus all through college I was super duper duper involved with this student organization whose “season” is mid-September through the first Saturday in November, which meant Halloween was never a good time for me since it always falls right when everything for the production the organization put on was getting into full-blown crazy mode. I had no time to be bothered with such dressing up madness hahaha.

  11. Oh girl, these look GOOD! I love incorporating spinach into stuff, and this sounds perfect. My husband might even eat ’em?!

    I am so not into Halloween costumes. I think it’s lame that it’s a chance to ‘be slutty’ and makes me think less of people. Sad, I know. But whatevs. I also think it’s annoying to have to think of a costume…..I’d rather just party or dance the night away & not worry about a costume! Hah.

  12. LOL – I love the search terms and the costume thing. I am an EASY costume kind of person! As in, I have one costume that I always wear. I like to be a “frenchie” – striped shirt, leggings, a beret, and I carry a baguette around. And I eat the baguette 🙂

    • Haha I like that you get a prop you can eat! I’m the same, I was usually a football player or field hockey player… haha I already had the gear!

  13. Love it all! Hahaha, I like the clips. I’ve never been much for skanky costumes either. The skankiest I got was freshman year of college as sporty spice….This year, I’m thinking Sugar Skull. I like your Green Monster Pancakes. They sound better than ones I made before. I just mixed in Amazing Grass, and they had a distinctly “green” taste. No one else ate them. I like green foods in general though, so I’d totally go for these.

  14. Green food that’s green naturally doesn’t freak me out. I drink green monsters a few days a week and LOVE them. Food coloring freaks me out and I avoid it at all costs- especially since you now hear about all these behavioral issues people have from food dyes and all.
