WIAW–Back in Chicago

So I’m back in Chicago and glad to be here! I’m ready to get this move going (this weekend!), so being back gets me a step closer to that. Today’s What I Ate Wednesday comes from my first full day back: Monday! If you’re new to WIAW, head on over to Peas and Crayons to see what it’s all about!

This may seem weird, but for breakfast I had a beef patty! I’d bought some from Trader Joe’s and was really craving some read meat when I woke up, so I cooked one up alongside some spinach sauteed in coconut oil and a sweet potato! Plenty of ketchup was involved…

After doing some organizing and some address changing (still need to do a lot of that…) I threw on some “appropriate” looking clothing that wouldn’t make me die in the hot weather we’re having to go run some errands and officially sign my lease.

It had been about 4 hours since breakfast and my stomach was growling so I grabbed a handful of almonds on my way out the door.

After signing my lease I headed to a new coffee shop called Fuel Station near my current apartment to check it out. My sister in law had told me they have juice so I wanted to give it a try. I ordered their apple, kale and spinach juice:

It was VERY green tasting! Haha not delicious but not bad either. I’m definitely going back to Fuel Station though, it was a really cute coffee shop with a lot of food options as well, and the workers were so friendly.

I also had a Quest Bar and called it lunch… not exactly a normal lunch but it worked for my schedule that day.

After a couple hours of work I walked to my Chiropractor appointment (about 1.2 miles away) and then walked home. When I got back I was so hungry so I had an early dinner around 5:30. I made up a big salad with what I had on hand: Romaine, beets, hearts of palm, two over easy eggs, olive oil and balsamic vinegar.

Wasn’t super filling so I had some “ice cream” right after made with Trader Joe’s frozen tropical mix (banana, mango, pineapple and strawberry), almond milk, stevia, vanilla, a pinch of salt and xantham gum all blended in the vitamix. I top it with “chocolate sauce” which is just Sunwarrior Vanilla Protein Powder mixed with Cocoa Powder.

A couple hours later I was feeling snacky (and still HOT) so I had some grapes that I had frozen. I could not stop (these are SO good) and had this bowl x 3!

Now I’m out of frozen grapes… womp womp. Lesson learned.

  1. I wish I had a store like Fuel Station around here. It looks so neat! I love adding eggs to things -salads, pasta, it adds so much flavor! I have some frozen grapes in the freezer but haven’t eaten any for awhile… probably because when I will I’ll eat the whole container 😉

  2. Katie, I thought you were settled back in Chicago already! I detest moving, but hope to be doing it soon myself.

    Is it hard for you to work out with your injuries (assuming that is what you see the chiropractor for)? I tend to baby myself because of mine.

    • I am in Chicago, just moving apartments! And I did have IT band issues but they haven’t been a problem recently so no issues working out!

    • I always have the most random breakfasts now because I just go with whatever I feel like! Yesterday it was oat bran, today it was back to a beef patty!

  3. Ice cream/fro-yo is most definitely one of my favorite hot weather foods! Smoothies too!

    I haven’t had frozen grapes in forever, but when I used to work at the pool during the (HOT!) summer months in AZ, I’d freeze grapes to eat throughout the day. They were a lifesaver!

  4. It’s ridiculous I have yet to try frozen grapes after having seen them all over the blog world for years. Maybe because I’m not the hugest grape fan, though.
    ‘Deconstructed banana softserve’ – read: frozen banana slices – as well as frozen soy chocolate pudding cups have been my favourite snacks lately. Both topped with nut or almond butter because I can’t go without them.
