So I’m back in Chicago and glad to be here! I’m ready to get this move going (this weekend!), so being back gets me a step closer to that. Today’s What I Ate Wednesday comes from my first full day back: Monday! If you’re new to WIAW, head on over to Peas and Crayons to see what it’s all about!
This may seem weird, but for breakfast I had a beef patty! I’d bought some from Trader Joe’s and was really craving some read meat when I woke up, so I cooked one up alongside some spinach sauteed in coconut oil and a sweet potato! Plenty of ketchup was involved…
After doing some organizing and some address changing (still need to do a lot of that…) I threw on some “appropriate” looking clothing that wouldn’t make me die in the hot weather we’re having to go run some errands and officially sign my lease.
It had been about 4 hours since breakfast and my stomach was growling so I grabbed a handful of almonds on my way out the door.
After signing my lease I headed to a new coffee shop called Fuel Station near my current apartment to check it out. My sister in law had told me they have juice so I wanted to give it a try. I ordered their apple, kale and spinach juice:
It was VERY green tasting! Haha not delicious but not bad either. I’m definitely going back to Fuel Station though, it was a really cute coffee shop with a lot of food options as well, and the workers were so friendly.
I also had a Quest Bar and called it lunch… not exactly a normal lunch but it worked for my schedule that day.
After a couple hours of work I walked to my Chiropractor appointment (about 1.2 miles away) and then walked home. When I got back I was so hungry so I had an early dinner around 5:30. I made up a big salad with what I had on hand: Romaine, beets, hearts of palm, two over easy eggs, olive oil and balsamic vinegar.
Wasn’t super filling so I had some “ice cream” right after made with Trader Joe’s frozen tropical mix (banana, mango, pineapple and strawberry), almond milk, stevia, vanilla, a pinch of salt and xantham gum all blended in the vitamix. I top it with “chocolate sauce” which is just Sunwarrior Vanilla Protein Powder mixed with Cocoa Powder.
A couple hours later I was feeling snacky (and still HOT) so I had some grapes that I had frozen. I could not stop (these are SO good) and had this bowl x 3!
Now I’m out of frozen grapes… womp womp. Lesson learned.
What are your favorite hot weather foods?
Have you moved recently? Any tips?
Anyone else a frozen grape fan?
i’ve been loooooving beets in my salads lately!!! i’m not really a huge frozen grape fan but i’m not a huge grape fan period
Haha well if you’re not a grape fan I can’t imagine liking them frozen! Same taste, different texture.
I love grape but I haven’t been able to get into the frozen grapes. I guess I have too sensitive teeth? That “Ice Cream” Looks amazing! I’m a huge gelato fan on hot days!
I usually let mine thaw a bit before eating them, easier on the teeth!
thats pretty much how I do breakfast EVERY DAY 🙂
Haha I had the same thing this morning!
I wish I had a store like Fuel Station around here. It looks so neat! I love adding eggs to things -salads, pasta, it adds so much flavor! I have some frozen grapes in the freezer but haven’t eaten any for awhile… probably because when I will I’ll eat the whole container 😉
Haha that’s my problem, just can’t stop!
Oh I love frozen grapes so much, I find them super addictive too!
Haha I’m glad I’m not the only one!
Katie, I thought you were settled back in Chicago already! I detest moving, but hope to be doing it soon myself.
Is it hard for you to work out with your injuries (assuming that is what you see the chiropractor for)? I tend to baby myself because of mine.
I am in Chicago, just moving apartments! And I did have IT band issues but they haven’t been a problem recently so no issues working out!
I love that you ate just what you were craving! I don’t really crave meat in the morning ever, but I think it’s great to listen to your body! And I also LOVE frozen grapes – so delicious!
I always have the most random breakfasts now because I just go with whatever I feel like! Yesterday it was oat bran, today it was back to a beef patty!
Ice cream/fro-yo is most definitely one of my favorite hot weather foods! Smoothies too!
I haven’t had frozen grapes in forever, but when I used to work at the pool during the (HOT!) summer months in AZ, I’d freeze grapes to eat throughout the day. They were a lifesaver!
Oh I bet those grapes helped being out in the sun in AZ in the summer!! HOT!
Frozen grapes are THE BEST!
Agreed.
I’ve been eating ice cream like it’s my job this summer. Gotta beat the heat somehow! 😉
And I’m moving this weekend, so I’m hoping to run across some tips myself! :-p
Ice cream is perfect!
Mmmm grapes!! I LOVE them lately!
That “ice cream” looks fab too. YummO
yay grapes!
It’s ridiculous I have yet to try frozen grapes after having seen them all over the blog world for years. Maybe because I’m not the hugest grape fan, though.
‘Deconstructed banana softserve’ – read: frozen banana slices – as well as frozen soy chocolate pudding cups have been my favourite snacks lately. Both topped with nut or almond butter because I can’t go without them.
Sounds delicious!
Is it weird I’ve never had ketchup on my sweet potato?! This is something I’m going to have to try! I love fruit normally but even more so when the weather starts to get hotter!
Frozen grapes are amazing! So addictive too.
Definitely try ketchup on your sweet potato! I thought of it because of sweet potato fries!
I WANT THAT SALAD!
lol it was insanely simple!
Yum! I’ve never seen the apple pie flavor quest bar, but I am going to keep my eye for it now. I wonder if they’ll have a pumpkin pie one?! I’m also a frozen grape addict. You can’t eat just one..
no pumpkin pie one yet, but that’s a good idea!
Frozen grapes = fish eggs at the reading program this summer at my church. Totally my idea 😉 The kids thought that they were the coolest things ever!
oh what a cute idea!
Love how you ate a burger for breakfast- props for honouring that craving buddy! I cannot wait for summer to arrive here in Australia so fresh produce will be aplenty (and cheaper!)
I tried to pretend it was just like breakfast sausage! Haha.
I need to stop by that new coffee shop in the ‘hood!!
haha fo sho.
I’m a HUGE frozen grape fan! Both creamy and “doughy” smoothies are also among my favorite hot weather foods. I have so many smoothie recipes that it’s embarrassing!
